White mutton qorma

Ingredients;

  • Green peas                      1 cup
  • Tomato                               2
  • Cashew nut                     2 tbsp
  • Yoghurt                           1/2 cup
  • Small cardamom              2
  • Oil                                     3 tbsp
  • Cumin seed                  1/2 tsp
  • Fenugreek dry leaves   2 tsp
  • Onion                                  2
  • Ginger                       1 inch pcs
  • Coriander pwd              1 tsp
  • Garam masala pwd    1/2 tsp
  • Red chilli pwd             1/2 tsp
  • Salt                              to taste
  • Milk                               1/2 cup
  • Green chilli                      2 tsp

Method;

  1. Grind cashewnuts, cardamom and yogurt together and make a paste.
  2. Heat oil in a pan and fry cumin seeds, add onion and ginger paste in it.
  3. When the onion turn brown add fenugreek leaves, coriander pwd, garam masala, red chilli pwd, salt and green chillies. Cook for a while.
  4. While stirring , add the cashew yoghurt paste  and cook for 4- 5 mins, so that the mixture gets thick and oil is separated.
  5. Now add milk and one cup water , bring it to a boil. Cook for 5- 7 mins, so that the gravy thickens again.
  6. Mix boiled peas in it. Add tomatoes anf cook for 5 mins on medium flame. 
  7. Garnish with coriander leaves and serve

Punj ratani daal

Ingredients;

  • Moong daal             1/4 cup
  • Masoor daal            1/4 cup
  • Maash daal              1/4 cup
  • Channa daal            1/4 cup
  • Oil                                3 tbsp
  • Cumin seeds               1 tsp
  • Onion                           half
  • Coriander pwd          2 tsp
  • Red chilli pwd         1/2 tsp
  • Turmeric                  1/2 tsp
  • Salt                          to taste

For tarka;

  • Butter                     4 tbsp
  • Tomato                      1
  • Yoghurt                  1/2 cup
  • Garam masala pwd 1/2 tsp
  • Big cardamom              2
  • Red chilli pwd           1/2 tsp
  • Fresh coriander       1/4 cup

Method;

  1. Heat oil in a pan fry cumin and onion till golden brown in it.
  2. Wash all the lentils and soak for 2 hours.
  3. When the onions turn golden brown then add all the lentils in it. Fry for a few minutes and then add 5 cups water, cook on medium flame .
  4. Now add coriander pwd ,red chilli pwd , turmeric, salt and cover with lid.
  5. Cook for 1/2 hour or till all lentils are cooked .
  6. Tarka:  In a separate wok, heat butter add tomato , yoghurt and garam masala, saute on low flame till oil is separated.
