Ingredients for Baked Chocolate Chip Cheese Cake:

For Base:

  • 2 cups chocolate biscuit crumbs
  • 4 tbsp unsalted butter, melted

For Filling:

  • 16 ounces cream cheese
  • 1 cup sugar
  • 2 cups cream mixed with 1-2 tbsp lemon juice, to make sour cream
  • 3 eggs
  • 1 tsp vanilla essence
  • 1-1/2 cups chocolate chips

Method:

  1. For the base: Grind the biscuits finely and mix in the melted butter.
  2. Press down in a greased 9 inch spring-form pan, chill whilst you are making the filling.
  3. For the filling: For the filling, beat cream cheese and add in sugar, sour cream, eggs and essence.
  4. Stir in 1 cup of the chocolate chips only.
  5. Pour filling over base and sprinkle remaining chocolate chips.
  6. Bake at 180 degrees C for 40 minutes.
  7. Turn off oven and let it be in the oven for another hour, do not open the oven door during the time, after an hour remove and let it cool.
  8. Chill overnight and serve.

Ingredients for White Chocolate Pistachio Bites:

  • 100 gram white chocolate
  • 15 gram butter
  • 75 ml cream
  • 25 gram pistachios, blanched and chopped
  • Icing sugar to dust

Method:

  • Melt butter, chocolate and cream in a pan and cool slightly and add the pistachios.
  • Carefully spoon into small peti four cases set in a peti four tin.
  • Let chill for a few hours and then peel off the peti four cases and serve dusted with icing sugar.
