Ingredients for Devil's Food Cupcakes:
8 ounces self raising flour
1 tsp baking powder
8 ounces light brown sugar
8 ounces unsalted butter
2 eggs, separated
3-1/2 ounces chocolate, melted
1 tsp vanilla essence
4 fluid ounces milk
For Icing:
4 ounces unsalted butter
1 tsp milk
4 ounces chocolate, melted
1 tsp vanilla essence
3-1/4 ounce icing sugar, sieved
Method:
Beat butter and sugar till light and fluffy.
Add yolks, chocolate, essence, flour, baking powder and milk alternately.
Beat whites into another bowl and fold in gently.
Spoon into paper cases lined in a cupcake tin.
Bake at 175 degrees C for 20 minutes.
Remove when done and cool.
For the icing: Beat butter and add milk, chocolate, vanilla essence and beat in icing sugar till thick and creamy.
Pipe or spread over cupcakes.
Ingredients for Rich Chocolate Log:
1 can (14 ounces) condensed milk
3 ounces chocolate
1-1/2 ounces butter
500 gram plain sponge cake, chopperized in crumbs
4 ounces glaze cherries, halved
2 ounces walnuts, chopped
2 ounces dates, pitted and chopped
For Icing:
1-1/2 ounces butter
2 ounces caster sugar
2 tbsp water
3 ounces icing sugar
1 ounce cocoa
Method:
Put chocolate, butter and condensed milk in a pan and stir till it melts.
Remove from heat and add in the cake crumbs, stir in cherries, dates and walnuts, spoon mixture in a greased proof paper or ding and form into a log shape.
Chill overnight.
For the icing: Melt butter with caster sugar and water.
Add in cocoa and icing sugar.
Beat well and cool till fudgy.
An hour before serving, unwrap the chocolate roll, spread icing and mark lines with a fork to give a log effect.
