Ingredients for Besan Paratha:
Baisan 1-1/2 cup
Flour 1 cup
Ghee 2 tbsp
Salt 1 tsp
Carom seeds 1 tsp
Red chilli powder 1 tsp
Turmeric 1/2 tsp
Roasted & crushed cumin 1 tsp
Roasted & crushed coriander 1 tsp
Onion 1
Coriander seeds 1 tbsp
Green chillies 4
Method:
Add baisan, flour, red chilli powder, turmeric, carom seeds, cumin, coriander & ghee and knead with water.
Now leave for few minutes.
Make portions and roll like roti, spread ghee and fry it.
Hot paratha is ready to serve.
Ingredients for Aloo Ka Raita:
Yogurt 2 cup
Potato 2
Onion 1
Tomato 1
Coriander leaves as required
Green chilli 4-6
Whole cumin 1 tsp
Bay leaf 6-7
Oil 2 tbsp
Crushed red chilli 1/2 tsp
Whole red chilli 1-2
Method:
Beat yogurt.
Peel potato, cut it and boil it.
Now add potato, onion, tomato, coriander leaves & green chilli in yogurt and mix it.
Heat oil and roast bay leaf, cumin & crushed red chilli.
Remove from stove. Add turmeric, salt & red chilli in yogurt and mix it.
Aloo ka raita is ready.
Ingredients for Kheere Ka Raita:
Cucumber 1
Yogurt 1 cup
Roasted & crushed cumin 1 tsp
Green chilli 4-6
Coriander 2 tbsp
Salt 1 tbsp
Onion 2 tbsp
Method:
Beat yogurt.
Take out seeds of cucumber and chop it.
Grind coriander and green chilli.
Now add green masala powder, salt & onion and mix it nicely.
Kheere ka raita is ready.
Ingredients for Lauki Ka Raita:
Lauki 250 gram
Yogurt 1/2 kg
Salt to taste
Coriander 2 tbsp
Green chilli 1 tbsp
Mint 2 tbsp
Onion 1
Roasted & crushed white cumin 1 tsp
Crushed red chilli 1 tsp
Method:
Peel lauki, crush it and boil it.
Add onion, coriander, mint & green chilli in yogurt and mix it.
Now add boiled lauki, salt, crushed red chilli & cumin and mix it.
Lauki ka raita is ready.
