Ingredients for Mango Halwa:

  • Milk 1 kg
  • Sugar 1 cup
  • China grass 2 tola
  • Mango 4

Method:

  1. Boil milk in one pan.
  2. Cut mango into cubes.
  3. Boil 1 cup water in one pan. Then add china grass and cook on low flame.
  4. Now put china grass into milk. Together add sugar, boil again and clove stove.
  5. Take out in serving dish, chill it and freeze it.
  6. Garnish with mango cubes and serve it.

Ingredients for Achar Bharay Karelay:

  • Bitter gourd 1 kg
  • Chana daal 250 gram
  • Cumin 1 tsp
  • Mustard seed 1 tsp
  • Crushed red chilli 1 tsp
  • Whole coriander 1 tsp
  • Ginger 1 tbsp
  • Garlic 1 tbsp
  • Onion seed 1/2 tsp
  • Fenugreek leaves 1/2 tsp
  • Turmeric 1/4 tsp
  • Oil 4 tbsp
  • Salt to taste
  • Coriander leaves 1 bunch
  • Onion 1
  • Carrot 1
  • Keri 1

Method:

  1. Peel bitter gourd and coat with salt and leave for 30 minutes. Then wash it nicely.
  2. Now boil chana daal for 3 hours and boil with salt and turmeric.
  3. Heat oil in one pan, saute ginger and garlic. Then add mustard seed, cumin, onion seed, fenugreek seed and whole coriander and roast little.
  4. Together add crushed red chilli and salt and roast it.
  5. Now add julian carrot, keri, boiled chana daal and chopped onion and roast it.
  6. Then fill bitter gourd with masala and tie with thread.
  7. In separate pan, heat oil, put bitter gourd, fry light and keep water drops.
  8. Add remaining achari masala and keep on simmer.
  9. When ready, garnish with coriander leaves and serve it.
