Apple Streusel Cake, Szechuan Chicken And Baked Chicken With Sour Cream by Zarnak Sidhwa

Ingredients for Apple Streusel Cake:

  • 3-4 apples, sliced
  • 2 tsp cinnamon
  • 1/4 tsp cloves, ground
  • 1/4 tsp nutmeg, ground

For Streusel:

  • 1/4 cup butter melted
  • 1 cup flour
  • 2/3 cup sugar

Method:

  1. Mix ingredients for the cake butter in a large mixing bowl until completely mixed.
  2. Spread out batter on a lightly oiled 13x9 inch baking dish.
  3. Place sliced apples on top in 2 to 3 rows slightly over lapping each other.
  4. Sprinkle cinnamon, ground cloves and ground nutmeg on top.
  5. Sprinkle sliced almonds on top.
  6. For the streusel: Mix butter, flour and sugar together with your hands until  it forms small crumbles.
  7. You may need to add more flour to the mixture until you reach the desired crumbles.
  8. Sprinkle streusel on top.
  9. Bake at 180 degrees for about 1 hour or till a skewer inserted in center comes out clean.

Ingredients for Szechuan Chicken:

  • 1 kg chicken boneless chunks
  • Green of spring onions, chopped
  • Rice to serve

For Szechuan Sauce:

  • 12 to 15 kashmiri chillies
  • 2 tbsp chopped garlic
  • 6 tbsp white vinegar
  • 2 tsp sugar
  • 2 tbsp sesame oil
  • 1 tsp salt

Method:

  • To make the sauce: Drain out all the water from the chillies and discard it.
  • Grind all ingredients except the oil in a blender to a fine paste. Keep aside
  • Heat the oil and pour over the chilli garlic paste. Mix well.
  • Add in the chicken and let cook till done.
  • Sprinkle chopped green of spring onion and serve with rice.

Ingredients for Baked Chicken With Sour Cream:

  • Chicken boneless 6
  • Lemon juice 3 tbsp
  • Worcestershire sauce 1/4 tbsp
  • Paprika 1/4 tsp
  • Pepper 1 tsp
  • Dry bread crumbs 1-1/2 cup
  • Sour cream 1 cup
  • Garlic chopped 1 clove
  • Salt 1/4 tsp

Method:

  1. Combine all the ingredients (sour cream, lemon juice, worcestershire sauce, paprika, garlic, seasoned salt and pepper) in a bowl.
  2. dip all the chicken pieces in the mixture in the bowl and coat it fully.
  3. Cover it and and refrigerate for whole night.
  4. then, remove it and coat the pieces in bread crumbs perfectly.
  5. Get a shallow baking pan.
  6. Brushed it well and place all the pieces maintaining inches differences.
  7. Continue the process by baling the preparation at 350 degrees C for 45 minutes.
  8. It is done once the chicken is tender and juicy.
