Loukoumades, Chicken Souvlaki And Tzatziki by Zarnak Sidhwa

Ingredients for Loukoumades:

  • 2 tsp yeast
  • 1 cup warm water
  • 1/2 cup warm milk
  • 1/4 cup caster sugar
  • 1 tsp salt
  • 1/3 cup butter, softened
  • 3 eggs
  • 1/2 cup honey
  • 4 cups flour
  • 1/2 cup water
  • Oil, for fry
  • 2 tbsp ground cinnamon

Method:

  1. Sprinkle the yeast over the warm water in a small bowl.
  2. Let stand for 5 minutes until the yeast softens and begins to form a creamy foams.
  3. In a large bowl, mix the warm milk, sugar and salt and mix to dissolve.
  4. Pour the yeast mixture into the milk mixture and stir to combine.
  5. Beat in the butter, eggs and flour until the mixture forms a smooth, soft dough.
  6. Cover the bowl and let rise until doubled in bulk, about 30 minutes.
  7. Stir the dough well, cover and let rise 30 minutes more.
  8. Mix honey and water in a saucepan and bring to a boil over medium-high heat.
  9. Turn off the heat and let the honey syrup cool.
  10. Place a large table or soup spoon in a glass of water near the batter.
  11. Scoop up about 2 tbsp of dough per puff with the wet spoon, drop it into the wet palm of your hand and roll it back into the spoon to create a round shape.
  12. do not over handle the puffy, soft dough.
  13. Drop the dough balls into the hot oil in batches, wetting the spoon each time you make a dough ball.
  14. Fry in the hot oil until golden brown on the bottom and roll them over to cook the other side, 2 to 3 minutes per batch.
  15. Gently set the loukoumades aside to drain on paper towels.
  16. Place the loukoumades on a baking sheet, drizzle them with honey syrup and sprinkle with cinnamon. Serve warm.

Ingredients for Chicken Souvlaki:

  • Juice of 1 lemon
  • 1-1/2 tsp oregano
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 4 garlic cloves, minced
  • 1/2 kg boneless chicken cubes
  • 1 zucchini, thickly cubed

Method:

  1. Combine lemon juice, oregano, olive oil, salt and garlic cloves
  2. Add chicken and let marinate few hours.
  3. Discard marinade.
  4. Thread the chicken and zucchini, alternately onto skewers.
  5. Heat a grill pan coated with oil.
  6. cook 8 minutes or until chicken is done, turning once.
  7. Serve with tzatziki sauce.

Ingredients for Tzatziki:

  • 1 cucumber
  • 1 tsp salt
  • 3 tbsp mint, finely chopped
  • 1 garlic clove, chopped
  • 1 tsp caster sugar
  •  300 ml strained yogurt
  • Paprika to garnish
  • Mint leaves to garnish

Method:

  1. Peel, de-seed and grate the cucumber finely.
  2. Add salt and let stand for 20-30 minutes, rinse under cool running water and drain well.
  3. Mix yogurt, mint, sugar. garlic, mix in drained cucumber, decorate with mint and sprinkle a pinch of paprika.
  4. Serve chilled with chicken souvlaki.
