Ingredients for Chocolate Tuiles:
1 egg white
2 ounce brown sugar
1 tsp flour
2 tbsp cocoa powder
2 tbsp cream
1 ounce butter, melted
1 ounce flaked almonds
Method:
Mix egg white, brown sugar, flour, cocoa, cram and butter with a whisk so no lumps remain.
Put a tbsp of mixture on a baking tray and spread to form a circle. sprinkle flaked almonds on it and bake at 200 degrees C for 4-5 minutes or till the edges short to darken.
Immediately remove and lift carefully while hot and roll onto a rolling pin, curve slightly.
When they cool, they resemble tuiles or tiles.
Ingredients for Truffle Torte:
100 gram unsalted butter
100 gram caster sugar
3 eggs, separated
100 gram chocolate, melted
25 gram flour
150 gram ground walnuts
For Icing:
50 gram chocolate, chopped
50 gram cream
To decorate: truffle chocolates
Method:
Beat butter and sugar and add in the yolks. chocolate, flour and nuts.
Beat egg whites stiff and fold in gently.
Pour in a 7 inch tin and bake for 40 minutes at 180 degrees C, remove and cool.
For Icing: Boil chocolate and cream together, stir till smooth and pour on cake.
Let set and mark wedges on the icing and decorate with truffle chocolates.
