Spicy Chicken, Hawaiian Mango Bread And Sweet Mango Pickle by Zarnak Sidhwa

Ingredients for Spicy Chicken:

  • 1 kg chicken
  • 1 tsp salt
  • 1 tsp black pepper, crushed
  • 1 tsp red chilli powder
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 1 tbsp ginger and garlic paste
  • Juice of 1 lemon
  • Chopped coriander to garnish
  • 2 tbsp butter
  • Few spinach leaves
  • 1 tsp garam masala powder
  • 1 tsp nutmeg powder
  • 1/2 tsp turmeric powder
  • 2 tbsp cream
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • 2 tbsp tomato paste
  • Red capsicum rouille

Method:

  1. To make the red capsicum rouille: Roast a red capsicum in a jot oven, peel it and puree it with olive oil.
  2. Drizzle and use to garnish.
  3. Marinate chicken with salt, pepper, red chilli powder, fennel seeds. ginger garlic, cumin seeds, lemon juice, fresh coriander and coriander powder for an hour.
  4. Heat butter, saute spinach, season with salt and pepper, garam masala, nutmeg and turmeric powder, add cream and remove from heat, cool and puree.
  5. Heat oil, saute onion, tomato and tomato puree, add chicken and cook till done.
  6. Serve chicken on a bed of spinach puree, drizzle rouille and garnish with coriander.

Ingredients for Hawaiian Mango Bread:

  • 2 cups flour
  • 2 tsp baking soda
  • 1-1/2 tsp salt
  • 2 tsp cinnamon
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1-1/2 cup sugar
  • 1 tsp vanilla essence
  • 1/2 cup golden raisins
  • 1/2 cup chopped walnuts
  • 2 cups diced mango
  • 1/4 cup flaked coconut

Method:

  1. Preheat oven to 350 degrees.
  2. Grease one pound loaf pan or bun pan.
  3. Stir flour, soda and cinnamon into a large mixing bowl.
  4. Make a well and add the remaining ingredients, mixing thoroughly.
  5. Pour into pan and let stand for 20 minutes.
  6. Bake 1 hour.

Ingredients for Sweet Mango Pickle:

  • 2 to 3 small green mangoes
  • 18 ounces jaggery
  • 2 inch piece cinnamon stick

Method:

  1. Peel and cut each mango into 6 slices.
  2. Discard seeds.
  3. Put mango slices in a pan, then cover and cook for 5 minutes on a medium heat with out adding any water, to slightly soften mangoes.
  4. In another pan, boil 1/4 cup water and add jaggery.
  5. Cook till jaggery is melted.
  6. Add mango slices and cinnamon stick to jaggery and cook, covered on medium heat for 15 minutes.
  7. Uncover and cook 10 to 15 minutes more till liquid is a medium thick syrup.
  8. Cool before serving.
