Lauki Kofta Curry And Chicken Tree by Chef Zakir

Ingredients for Lauki Kofta Curry:

  • Bottle gourd 1/2 kg
  • Onion chopped 1
  • Black cardamom 2
  • Green chillies 3
  • Boiled tomatoes 3
  • Bay leaves 2-3
  • Cloves 8-10
  • Cumin seeds crushed 1 tsp
  • Turmeric 1 tsp
  • Chilli powder 1 tsp
  • Coriander powder 1 tsp
  • All spice powder 2 tsp
  • Ginger garlic paste 2 tbsp
  • Coriander leaves 2 tbsp
  • Gram flour 4 tbsp
  • Oil 3-4 tbsp
  • Water 1-1 1/2 cup
  • Oil for fry
  • Salt to taste

Method:

  1. Firstly, peel bottle gourd, cut into 4 4 pieces, remove pulp and mash it nicely.
  2. Then add gram flour, all spice powder, salt and ginger garlic paste, mix it nicely with hands, make small small balls and keep aside.
  3. Now heat deep frying oil and little fry balls, take out when light in color and keep aside.
  4. Then in separate karahi pan, heat 3-4 tbsp oil, fry chopped onion until golden.
  5. Now add 1 tbsp ginger garlic paste, bay leaves, black cardamom, cloves and boiled tomatoes and cook for 1 to 2 minutes.
  6. After it, add coriander powder, turmeric, cumin seeds crushed and chilli powder and cook for few seconds.
  7. Then add water, cover it and boil for 3 to 4 minutes.
  8. Now keep fried bottle gourd balls and chopped green chillies, do high flame and roast little. Before taking out, sprinkle chopped coriander leaves and all spice powder and serve.

Ingredients for Chicken Tree:

  • Chicken breast 1/2 kg
  • Onion 1
  • Tomatoes 2
  • Iceberg 1 glower
  • Yogurt 125 gram
  • Coriander leaves 1/4 bunch
  • Mint leaves 1/4 bunch
  • Water 1/2 cup
  • Coriander powder 1 tbsp
  • Turmeric 1/2 tsp
  • Chilli powder 1/2 tsp
  • Lemon juice 2 tbsp
  • Garlic paste 2 tbsp
  • Oil 3 tbsp
  • Salt to taste

Method:

  1. Firstly, heat oil in karahi pan and add ginger garlic paste.
  2. When cook little, add chicken and fry until it color changes.
  3. Now do low flame, add yogurt, coriander powder, turmeric, chilli powder, salt and water and leave for cook.
  4. After 10 to 15 minutes, remove cover, do little high flame and start water dry.
  5. Together add coriander leaves, mint leaves and lemon juice. When water dries, close the stove.
  6. Now cut into thick piece with hands or cut with knife. Slice onion and tomato. Then spread on platter and put cooked chicken on top and serve.
