Korma Masala, Biryani Masala, Achari Masala And Karahi/Fry Masala by Chef Tahira Mateen

Ingredients for Korma Masala:

  • Coriander powder 3/4 cup
  • Red chilli powder 1/4 cup
  • Deghi chilli powder 1/4 cup
  • Salt 1/4 cup
  • Garlic powder 1 tbsp
  • Ginger powder 1 tbsp
  • Cumin powder 2 tbsp
  • Fennel seed powder 1 tbsp
  • Black pepper powder 1 tbsp
  • Star anise powder 1 tsp
  • Cinnamon powder 1 tsp
  • Black cardamom powder 1 tbsp
  • Shah cumin powder 1 tsp
  • Clove powder 1 tsp
  • Nutmeg, mace powder 1 tbsp
  • Bay leaf 3
  • Whole clove 15
  • Whole green cardamom 15

Method:

  1. Roast all ingredients separate.
  2. Now chilli it, grind all ingredients in coffee grinder and keep in air tight jar.
  3. Korma masala is ready.

Ingredients for Biryani Masala:

  • Red chilli powder 1/4 cup
  • Deghi chilli powder 1/4 cup
  • Turmeric powder 1 tbsp
  • Salt 1/4 cup
  • Coriander powder 1/2 cup
  • Garlic powder 1 tbsp
  • Ginger powder 1 tbsp
  • Cumin powder 2 tbsp
  • Fennel seed powder 1 tbsp
  • Black pepper powder 1 tbsp
  • Shah cumin powder 1 tsp
  • Clove powder 1 tsp
  • Green cardamom 1 tbsp
  • Nutmeg, mace 1 tbsp
  • Bay leaf 3
  • Aloo bukhra 1 cup

Method:

  1. Roast all ingredients except aloo bukhra separate.
  2. Now chill all ingredients and grind all ingredients in coffee grinder
  3. Together mix aloo bukhra  and keep in air tight jar.

Ingredients for Achari Masala:

  • Cumin 2 tbsp
  • Fennel seed 1/4 cup
  • Fenugreek seed 3 tbsp
  • Onion seed 3 tbsp
  • Whole coriander 1 tbsp
  • Mustard 2 tbsp
  • All spice powder 2 tbsp
  • Crushed red chilli 2 tbsp
  • Turmeric 1 tsp

Method:

  1. Mix all ingredients and grind in coffee grinder.
  2. Now keep in air tight jar.
  3. Achari masala is ready.

Ingredients for Karahi/Fry Masala:

  • Chaat masala 4 tbsp
  • Cumin 2 tbsp
  • Coriander 2 tbsp
  • Crushed red chilli 2 tbsp
  • Crushed black pepper 2 tbsp
  • Fenugreek leaves 2 tbsp
  • All spice powder 2 tbsp

Method:

  1. Grind all ingredients in coffee grinder.
  2. Now keep masala in air tight jar.
