Florentines And Chocolate Halwa by Zarnak Sidhwa

Ingredients for Florentines:

  • 2 ounces butter
  • 4 tbsp caster sugar
  • 3 tbsp flour
  • 1-3/4 oz almonds, chopped
  • 1-3/4 oz mixed peel, chopped
  • 1 oz raisins, chopped
  • 1 oz glaze cherries, chopped
  • To coat:  4 oz dark chocolate, melted
  • To coat: 2 oz white chocolate, melted

Method:

  1. Heat butter and sugar till melted.
  2. Remove from heat and add in flour, peel, raisins, cherries, almonds and place a teaspoonful of mixture well apart on a tray.
  3. Flatten slightly with a fork.
  4. Bake at 180 degrees C for 10 minutes.
  5. Cool till firm on the tray and then transfer to a rack.
  6. Spread melted chocolate on the smooth side of the Florentines.
  7. Let set. As the chocolate sets, mark wavy lines with a fork and chill. (Half of the Florentines be coated in white chocolate for a varation).

Ingredients for Chocolate Halwa:

  • 250 gram khoya
  • 1-1/2 cups milk
  • 1 cup dessicated coconut
  • 3/4 cups sugar
  • 2 tbsp cocoa powder
  • 1/2 tsp cardamom powder
  • 1/2 cup almonds, blanched and sliced
Method:
  1. Mix khoya, milk, sugar and cocoa in a pan and cook till mixture starts to thicken and leaves the sides.
  2. This will take about 30 minutes.
  3. Remove from fire and add in the coconut and cardamom powder.
  4. Pour in a greased plate or tin.
  5. Top with sliced almonds and press it.
  6. Let set in fridge.
  7. Cit in squares or diamonds and serve chilled.
