ingredients for Pasanday Ki Biryani:

  • Pasanday 1 kg
  • Yogurt 1 cup
  • Fresh milk 1 cup
  • Oil or ghee 1 cup
  • Mint leaves 1 bunch
  • Chopped onion 4
  • Green chillies 6
  • Lemon 6
  • Rice 2-1/2 cup
  • Red chilli powder 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Raw papaya paste 2 tbsp
  • Yellow color 1 pinch
  • Salt to taste

Spices for Pasanday:

  • Clove 4
  • Green cardamom 6
  • Black pepper 6
  • White cumin seeds 1 tsp
  • Poppy seeds 1 tbsp
  • Roasted gram 2 tbsp

Ingredients for Yakhni Main Mash Ki Dal:

  • White lentil 1 cup
  • Mint leaves 1 bunch
  • Oil 1 cup
  • Onion chopped 2
  • Green chillies 3
  • Turmeric 1 tsp
  • All spice 1 tsp
  • Ginger garlic paste 1 tsp
  • Chilli powder 1 tbsp
  • Butter 1 tbsp
  • Ginger chopped 2 tbsp
  • Salt to taste

For Stock:

  • Water 3 cups
  • Ginger 1 piece
  • Garlic 1 bunch
  • Whole black pepper 4
  • Salt 1 pinch
  • Fennel seeds 1 tsp
  • Whole coriander 1 tbsp
Ingredients Koyla Dum Chicken:
  • Chicken 1-1/2 kg
  • Mint leaves 1 bunch
  • Oil 1 cup
  • Yogurt 1 cup
  • Green chillies 3
  • Lemon 4
  • Ginger garlic paste 1 tbsp
  • Black pepper 1/2 tsp
  • Bihari masala 2 tbsp
  • Crushed red pepper 1/2 tbsp
  • Ghee/butter 1/2 tbsp
  • Salt to taste
