Chicken Vindaloo And Stir Fry Cauliflower by Chef Mehboob

Ingredients for Chicken Vindaloo:

  • Chicken 1 kg
  • Oil 2 tbsp
  • Onion 1
  • Salt to taste
  • Coriander few leaves

For Chicken Vindaloo:

  • White cumin 3tsp
  • Kashmiri red chilli 12
  • Ginger 1/2 inch piece
  • Black cardamom 2
  • Garlic 10 cloves
  • Vinegar 2 tbsp

Method:

  1. Wash chicken and cut into pieces.
  2. Grind masala in vinegar.
  3. Heat oil in pan and fry onion.
  4. When onion becomes brown, add coriander leaves and fry it. Then add grinded masala and fry with stir continuously.
  5. Now add chicken and salt and cover pan.
  6. Cook chicken in this water, together stir continuously and cook for approx 20 minutes.
  7. Lastly, low heat and cook more for 5 minutes.
  8. Decorate with coriander leaves and serve with plain white rice.

Ingredients for Stir Fry:

  • Cauliflower 1 kg
  • Oil as required

For Marination:

  • Flour 1/2 tsp
  • Baking powder 1-1/2 cup
  • Turmeric powder 1 tsp
  • Salt to taste
  • Lemon juice 1/4 cup
  • Green chilli 10
  • Egg 1
  • Water as required

For Stir Fry:

  • Oil 2-1/2 tbsp
  • Garlic 1/2 tsp
  • Ginger 1/2 tsp
  • Red capsicum 1
  • Green capsicum 1
  • Tomato ketchup 1/2 cup
  • Tamarind chutney 1/2 cup
  • Spring onion 1/2 cup

Method:

  1. Mix all ingredients of marination, put chopped cauliflower and leave for 15 minutes.
  2. Now deep fry in medium hot oil until light brown and tender.
  3. Heat oil in a pan and fry onion, garlic and ginger. Then add capsicum and cook more for 3 minutes.
  4. Together add tomato ketchup and tamarind chutney and mix it.
  5. Lastly, add fried cauliflower, mix it and cook for 2 minutes.
  6. Add spring onion and serve hot.
