Cheese N Chicken Spirals, Mutter Paneer And Eggs In Buns by Zarnak Sidhwa

Ingredients for Cheese N Chicken Spirals:

  • 1 egg
  • 1 tbsp water
  • 1/2 kg puff pastry
  • 1/4 cups grated parmesan cheese
  • 1/4 tsp ground red pepper
  • 8 slices of smoked chicken

Method:

  1. Beat egg and water until blended.
  2. Roll pastry into 14x10 inch rectangle, cut lengthwise in half.
  3. Brush both pastry halves lightly with egg,
  4. Sprinkle 1 pastry piece with 3 tbsp parmesan and pepper, cover with chicken slices and remaining pastry piece, egg side down.
  5. Roll gently with rolling pin to seal.
  6. Brush lightly with some of the remaining egg.Roll up lightly into 14 inch log, starting at 1 long side, cut crosswise into 24 slices.
  7. Place cut-sides down, on baking sheet.
  8. Brush with remaining egg, sprinkle with remaining parmesan cheese.
  9. Bake 12 to 14 min or until golden brown

Ingredients for Mutter Paneer:

  • 2 liters fresh milk
  • 8 oz yogurt
  • 1 tbsp salt
  • Green peas 400 gram
  • Lemon 1
  • 2 tbsp ghee
  • 2 onion
  • Ginger 1 inch piece
  • Turmeric powder 1/4 tsp
  • Red chilli powder 1 tsp
  • Coriander powder 1 tsp
  • Garam masala powder 1 tsp
  • Salt to taste

Method:

  1. Add salt to yogurt and mix.
  2. Bring the milk to a boil and add yogurt mixture to it.
  3. Stir till the yogurt separates.
  4. Put a wet muslin (malmal) cloth in a paneer mould or a serve and pour the mixture in it.
  5. Cover with its lid and press down to remove all water. Cool.
  6. Refrigerate once at room temperature.
  7. Use cubed to add in main dishes or sliced in wedges.
  8. Heat sufficient ghee in a karahi and deep fry till light brown.
  9. Drain onto an absorbed paper.
  10. Peel, wash and chop onions and ginger finely.
  11. Heat two tbsp ghee in a pan and add chopped onions and ginger.
  12. Saute till lightly browned.
  13. Add turmeric powder, red chilli powder. coriander powder, salt and peas and cook, adding a little water, till the peas are tender and a little gravy remains.
  14. Add the paneer cubes, garam masala powder and boil for five minutes.
  15. Serve hot with chapatis.

Ingredients for Eggs In Buns:

  • Eggs, beaten 4
  • Whole wheat burger buns 4 small
  • Oil 2 tbsp
  • Ginger, chopped 1 inch piece
  • Garlic, chopped 4 cloves
  • Onion, chopped 1 medium
  • Tomato, chopped 1 large
  • Red chilli powder 1 tsp
  • Salt to taste
  • Coriander chopped 2 tbsp
  • Butter, melted 2 tbsp
  • White sauce 4 tbsp

Method:

  1. Preheat oven to 180 degrees C/360 degrees F/Gas Mark 4.
  2. Heat the oil in a pan, add the ginger, garlic, and onions and saute till golden.
  3. Add the tomato, red chilli powder, 2 tbsp water and salt.
  4. Stir and add the eggs and fresh coriander.
  5. Cook, stirring, till the eggs are well scrambled.
  6. Divide the mixture into four equal portions.
  7. Cut a thin slice off the top of the buns and scoop out the crumbs to form bread cups.
  8. Apply the melted butter on the inside of the cups and spoon one portion of the filling into each like a mound.
  9. Drizzle a tbsp of white sauce on top of each mound and grill the buns in the preheated oven till the top turns a light golden. Serve hot.
