Manhattan meatballs

Ingredients;

  • Beef mince                1kg
  • Fresh breadcrumbs 2 cups
  • Onion                         1/2 cups
  • Egg                               2
  • Parsely                        2 tbsp
  • Salt                               to taste
  • Margarine                   2 tbsp
  • White pepper               1 tsp
  • Apricot pulp                2 cups
  • Barbeque sauce          1/2 cup

Method;

  1. Preheat oven at 350°C .
  2. Mix together mince , bread crumbs , parsely, salt , onion , pepper and keep in refrigerator for 20 minutes .
  3. Make small balls of the mixture .
  4. In a wok , heat margarine , golden brown the meatballs in the wok .
  5. Then place the meatballs in a baking tray.
  6. Blend apricot pulp and make a paste , mix it with barbeque sauce .
  7. Pour this sauce over the meatballsand bake in the oven for 30 mins.
  8. Serve with rice or pasta .

Tomato pickle 

Ingredients;

  • Cumin              1 tsp
  • Raii                   1 tsp
  • Whole red chilli   4
  • Tomatoes            1 kg
  • Green chillies       3
  • Oil                      1 tbsp
  • Methi                 1 tbsp
  • Kalonji                 1 tsp
  • Fenugreek seeds 1 tsp
  • Curry leaves        10- 12
  • Garlic                  4 cloves
  • Ginger                 1 tbsp

Method;

  1. Heat oil in a pan, add chopped garlic and ginger .
  2. Add green chillies , red chillies , kalonji, fenugreek seeds , raii, cumin and curry leaves.
  3. Add tomatoes and cook for 7-8 mins.
  4. Add qasuri methi in the end, leave for a minute and then take off.
