Ingredients for Sosi Chicken Italiano:
Chicken breast 4
Cooking oil/ Olive oil 2 tbsp
Onion 1
Red capsicum 1
Chicken stock 1 cup
Milk 2 tbsp
Flour 2 tbsp
Cream 1 tbsp
Oregano 1/4 tsp
Black olives 5-6
Cheddar cheese 1/4 cup
Mozzarella cheese 1/4 cup
Garlic 1 tsp
Salt and black pepper as taste
Parsley 2 tbsp
Method:
Cut chicken breast into 2 portions.
Cut onion into round rings and separate all rings.
Cut capsicum into slice stripes.
Heat olive oil in one big non-stick pan and saute garlic.
Together add chicken, fry both sides for 5 5 minutes until cook well.
Boil chicken stock and milk. When boiled, add flour, mix it and cook for few minutes.
Then put onion rings and capsicum.
Then do seasoning with salt and black pepper, put black olives and mix it.
Lastly, add cheddar and mozzarella cheese and fold in chicken. Sprinkle some oregano.
When serve, keep vegetables on plate with the help of fork.
Keep chicken breast on top and put sauce.
Garnish with olives and parsley and serve with hot hot pasta.
Ingredients for Chimichanga:
Roll patti 1 packet
Chicken breast 375 gram
Cheddar cheese 200 gram
Mozzarella cheese 200 gram
Capsicum 2
Onion 2
Cumin seeds 1 tbsp
Oil 2 cup
Salt 1 tsp
Carrot 2
Cauliflower 1
Egg 1
Flour 2 tbsp
Method:
Cut chicken into thick pieces and fry for 4 minutes in 4 tbsp oil.
Then add salt, half sliced chopped onion, fried chillies and all green chillies, fry more for 2 minutes and take out.
Now join roll patti, keep chicken and cheese in center. Now mix mixture of flour and egg and seal it.
Heat 3 tbsp oil in separate pan.
Then add cauliflower, carrot and 1 cup water, cover it and cook for 5 minutes.
Add all ingredients except chicken, cook on high flame for 2 minutes and take out.
Lastly, heat remaining oil, fry on both sides for 7 minutes and take out.
Serve hot with vegetables.
