Korma Egg Biryani, Keema Matar And Cauliflower Fritters by Zubaida Tariq

Ingredients for Korma Egg Biryani:

  • Boiled eggs 6
  • Chopped onion 4
  • Red chilli powder 1 tbsp
  • Coriander powder 2 tbsp
  • All spice powder 1 tsp
  • Salt to taste
  • Poppy seeds 1 tbsp
  • Small cardamom 4
  • Mint leaves 1/2 bunch
  • Green chillies 4
  • Fresh milk 1/2 cup
  • Lemons 2
  • Yogurt 1 cup
  • Yellow food color 1 pinch
  • Clarified butter 1 cup
  • Rice 2 cups

For Rice:

  • Whole black pepper 4
  • Green chillies 2
  • Mint leaves 1/2 bunch
  • Salt to taste
  • Small cardamom 3
  • Black cumin seeds 1 tsp

Method:

  1. In one pot, heat ghee or oil, fry onion until golden brown, take out and do crispy in tissue paper.
  2. Now blend half onion and yogurt in blender, put in pot and roast slightly.
  3. After it, add red chilli powder, coriander powder, all spice powder, poppy seeds and small cardamom and roast well.
  4. Then fry eggs in oil in separate pan, take out when golden in color and put in masala.
  5. Put green chillies and mint leaves on top and leave for simmer.
  6. After it, add whole black pepper, green chillies, mint leaves, salt, small cardamom and black cumin seeds in water and boil half, remove water, grease rice pot with slightly oil and make layer of half rice.
  7. Now take out eggs from masala, keep separate and spread masala on rice.
  8. Then make layer of remaining rice.
  9. Dissolve corn flour in 1/2 cup milk, put on top, add lemon juice and keep on simmer.
  10. When steam comes on top, take out rice on dish, keep eggs on top, put fried onion and mint leaves and serve hot.

Ingredients for Keema Matar:

  • Mince 1/2 kg
  • Peas 2 cup
  • Onion (chopped) 2
  • Red chilli powder 1 tbsp
  • Turmeric powder 1 tsp
  • Salt to taste
  • Ginger garlic paste 1 tbsp
  • Green chillies 4
  • Green coriander 1 bunch
  • Oil 1 cup

Method:

  1. Firstly, in one pot, heat oil and fry onion until light pinkish in color.
  2. Now put ginger garlic paste, turmeric powder and red chilli powder and roast slightly.
  3. After it, add peas and green chillies, roast more for 5 minutes, put salt and keep on simmer.
  4. Lastly, put green coriander and green chillies and serve. Together put parathay or plain rice.

Ingredients for Cauliflower Fritters:

  • Cauliflowers 1
  • Green chillies 3
  • Corn flour 1 cup
  • Bread crumbs 1/2 cup
  • Black pepper 1 tsp
  • Sugar 1 tsp
  • Baking powder 1 tsp
  • Flour 2 tbsp
  • Egg whites as required
  • Oil as required
  • Salt to taste

Method:

  1. Firstly, wash cauliflower and separate flowers.
  2. In one bowl, put corn flour, egg whites, baking powder, salt, green chillies, black pepper, bread crumbs and sugar and beat well.
  3. Then in one karahi pan, heat some oil, dip one one flower in mixture of corn flour and deep fry on low flame.
  4. When cauliflower becomes golden in color, take out and serve with chilli sauce.
