Mughlai Mutton Malai, Mocha Caramel Trifle And Kofta Biryani by Shireen Anwer

Ingredients for Mughlai Mutton Malai:

  • Mutton 1/2 kg
  • Salt 1 tsp
  • Yogurt 1 cup
  • Coriander powder 1-1/2 tsp
  • All spice 1 tsp
  • Lemon juice 2 tbsp
  • Roasted cumin 1 tsp
  • Chilli powder 1-1/2 tsp
  • Brown onion crushed 3 tbsp
  • Kewra water 1 tbsp
  • Saffron 1/4 tsp
  • Ginger garlic paste 1 tbsp
  • Green cardamom powder 1/4 tsp
  • Cashew nuts grinded
  • Malai 2 tbsp
  • Mint leaves 10

Method:

  1. Firstly, marinate mutton with salt, yogurt, coriander powder, all spice, lemon juice, roasted cumin, chilli powder, brown onion crushed, ginger garlic paste, green cardamom powder and leave for 1 hour.
  2. In one pan, heat oil as required, put marinated mutton, cover it and cook on low flame for 30 minutes.
  3. Now put cashew nuts grinded, malai, kewra, saffron and mint leaves and keep for simmer until oil comes on top.
  4. Then serve with naan.

Ingredients for Mocha Caramel Trifle:

  • Chocolate Swiss roll slices 12-15
  • Cream tetra pack 400 gm
  • Gelatin 1 tbsp
  • Coffee 1 tbsp
  • Sugar 1/2 cup
  • Walnuts halves to decorate as required
  • Cherries to decorate as required
  • Chocolate sauce for decoration
  • Praline 1/2 cup

Method:

  1. Firstly, dissolve gelatin in 1/4 cup water
  2. Now dissolve coffee in 1/2 cup water.
  3. In one pan, melt sugar. When sugar melts, add dissolved coffee and cook until sugar dissolves.
  4. Now add dissolved gelatin, remove from stove and cool it.
  5. Then in one bowl, mix cream with cold coffee and sugar mixture.
  6. For Assemble: In one bowl, keep chocolate swiss roll slices in center and edges.
  7. Then put food syrup in it and wet little.
  8. Now put cream and coffee mixture, sprinkle praline, garnish with whipped cream, cherries, walnuts and chocolate sauce and serve.

Ingredients for Kofta Biryani:

For Kofta:

  • Mince 1/2 kg
  • All spice 1 tsp
  • Poppy seeds grinded 1-1/2 tsp
  • Salt 1 tsp
  • Ginger garlic paste 1-1/2 tsp
  • Malai 1 tbsp
  • Desiccated coconut 1 tsp
  • Chilli powder 1 tsp
  • Roasted gram 1 tbsp
  • Onion raw grinded 1
  • Bread soaked in milk 1
  • Coriander leaves 2 tbsp
  • Green chillies 2

For Masala:

  • Oil 3/4 cup
  • Green chillies whole 6
  • Tomato blended 2
  • Cumin 1 tsp
  • Ginger garlic paste 1-1/2 tsp
  • All spice 1/2 tsp
  • Chilli powder 2 tsp
  • Salt 1 tsp
  • Coriander powder 2 tsp
  • Onion brown 1/2 cup

For Yogurt Mixture:

  • Yogurt whipped 1-1/2 cup
  • Yellow color 1 pinch
  • Kewra water 1 tbsp
  • Green cardamom 1/4 tsp
  • Nutmeg grinded 1/4 tsp
  • Coriander and mint leaves 2 tbsp
  • Mace grinded 1/4 tsp
  • Dried plums 8

Method:

  1. For Kofta: Grind all ingredients in chopper nicely.
  2. Then add 1/4 cup water, make koftay and keep aside.
  3. For Masala: Heat oil, put all ingredients and roast it.
  4. Then add water, put koftay and cook on low flame until koftay is tendered and gravy becomes thick.
  5. Now put salt, 1/2 tsp black cumin and 1 tbsp garam masala in 750 grams rice and cook half.
  6. For Assembling Rice: Put half quantity of boiled rice in pan. Now put koftay and gravy. Then add yogurt mixture, coriander leaves, mint leaves and dried plums.
  7. Then add remaining rice and 1/4 cup oil or ghee and leave for simmer for 15 minutes.
