Khasta Qeema Rogni Naan, Bohri Chicken Biryani And Shirwani Karahi by Chef Gulzar

Ingredients for Khasta Qeema Rogni Naan:

For Naan:

  • Flour 1/2 kg
  • Sugar 1 tsp
  • Yeast 1- 1/2 tbsp
  • Butter 2-3 tbsp
  • Salt to taste

For Filling:

  • Beef mince 300 gm
  • Chopped onion 1
  • Green chilies 3-4
  • Coriander 1/2 bunch
  • Yogurt 1/2 cup
  • All spice powder 1 tsp
  • Cumin powder 1 tsp
  • Red chilli flakes 1 tsp
  • Ginger garlic paste 1 tbsp
  • Oil  2-3 tbsp
  • Salt to taste

Method:

  1. For Naan: Take lukewarm water, add yeast and sugar, mix it and leave.
  2. When yeast double in size, then put it into mixing bowl.
  3. Now add flour, salt, milk or water as required and knead dough.
  4. Then pack with plastic, place it on warm place for 2 to 3 hours.
  5. Then take it out and knead it and make portions of it.
  6. For Filling: Heat oil in one pan, add onion and fry it.
  7. Now add beef mince and ginger garlic paste and roast it nicely.
  8. After it add whole spice powder, cumin powder, red chillies flakes, ginger garlic paste and salt, mix it nicely and roast it.
  9. Then add yogurt in it.
  10. When mince leaves its oil, add coriander and green chilies, remove from stove and leave for cooling.
  11. Now fill it into portions, close it, then roll it thick and make marks with the help of fork.
  12. Bake in preheat oven for 10 - 12 minutes on 200 degrees C.
  13. When color appears, brush with butter and bake more for 1 to 2 minutes, take out and serve hot/
  14. Khasta Rogni Naan is ready.

Ingredients for Bohri Chicken Biryani:

  • Rice 1/2 kg
  • Chicken 1 kg
  • Fried onion 1
  • Potato 2-3
  • Bay leaf 2-3
  • Green chili  2-3
  • Green coriander 1/2 bunch
  • Food color 1 pinch
  • Onion chopped 1 cup
  • Yogurt  1/2 cup
  • Mint leaves 1/2 cup
  • Ginger 1 inch
  • Coriander powder 1 tsp
  • Turmeric powder 1 tsp
  • Shah cumin 1 tsp
  • Nutmeg mace 1/2 tsp
  • Garlic chopped  2 tbsp
  • Red chili powder  2 tbsp
  • Oil for fry
  • Whole all spice as required
  • Salt  to taste

Method:

  1. Wash rice nicely.
  2. Then soak in water and leave for 1 to 2 hours.
  3. Now add bay leaves, shah cumin and salt and boil it.
  4. When the water boils, add rice, boil it 1/4, take out and strain it.
  5. Then keep it aside.
  6. For Korma: Add food color, water and salt in potatoes and boil hard.
  7. Add ginger, garlic, green coriander, green chilies, water (as required) in blender and blend it.
  8. Now heat oil in one pan, add whole spice powder and fry it
  9. Then add onion, fry it, add hara masala and roast it.
  10. Then put chicken and roast it.
  11. After it. add red chilli powder, coriander powder, turmeric powder, nutmeg mace, salt and yogurt and roast it nicely.
  12. When masala is roasted and leaves oil, then take out
  13. In the end, make layer of some quantity of korma and rice in pot.
  14. Then add korma, onion, green coriander and mint leaves.
  15. After it add rice, potato, food color and leave it for simmer.
  16. Now take it out in dish and serve it.

Ingredients for Shirwani Karahi:

  • Chicken 1/2 kg
  • Tomatoes 1/2 kg
  • Green chilies 5-6
  • Big green chillies 5-6
  • Ginger garlic paste  2 tbsp
  • Black pepper 1 tsp
  • Cumin seeds 1 tsp
  • Oil for fry
  • Salt to taste

Method:

  1. In one karahi pan, heat oil and ghee and roast chicken.
  2. Then take take its oil.
  3. Now add tomato, green chilies, and ginger garlic paste, mix it nicely and tendered it.
  4. Now put whole green chilies, salt, cumin seeds and black pepper, mix it nicely and roast it.
  5. Serve the karahi into dish, garnish with green chilies and coriander.
  6. Serve with hot hot tandoori naan.
  7. Delicious Shirwani Karahi is ready.
