Mutton Rajasthani, Kids Chicken Rice And Italian Fish Tomato by Chef Zakir

Ingredients for Mutton Rajasthani:

  • Mutton 1/2 kg
  • Onion 2 medium
  • Oil 1/2 cup
  • Yogurt 250 gm
  • Boiled almond 25gm
  • Ginger garlic paste 2 tbsp
  • Chili powder 1 tbsp
  • Green cardamom 8
  • Black cardamom 2
  • Cloves 1/2 tsp
  • Black pepper powder 1/2 tsp
  • Poppy seeds 2 tbsp
  • Desiccated coconut 4 tbsp
  • Salt to taste
  • Cinnamon 1 inch piece

Method:

  1. Firstly, heat oil in pan and fry onions until golden brown.
  2. Then roast ginger garlic paste and mutton until mutton change its color.
  3. Then low the flame, add yogurt, chili powder and salt and cook for 1 to 2 minutes.
  4. Then add cardamom, green chilies, cinnamon, cloves and 1-1/2 cup water, cover it and leave for cooking.
  5. Now grind boiled almond, poppy seeds and desiccated coconut in blender  with some water.
  6. After it, add paste in karahi. When mutton is tendered, high flame and roast it. Together put black pepper powder, mix it and serve.

Ingredients for Kids Chicken Rice:

  • Chicken drumsticks 6
  • Rice 300 gm
  • White vinegar 1/4 cup
  • Ginger garlic paste 1 tbsp
  • All spice powder 1/2 tsp
  • Cumin seeds 1 tsp
  • Almond 25 gm
  • Pistachio 25 gm
  • Fruit cocktail 1 cup
  • Oil for fry
  • Oil 1/4 cup
  • Onion 1
  • Salt to taste

Method:

  1. Firstly, in one bowl, marinate chicken drumstick with white vinegar, ginger garlic paste, all spice powder and salt and keep it aside.
  2. Now take a separate pan, add onion, almond and pistachio and roast it for 1 to 2 minutes.
  3. Then add fruit cocktail, cumin seeds, 1-1/2 cup water and salt and cook on low flame.
  4. Now fry drumsticks in oil until golden.
  5. Put rice in hot water.
  6. When it comes on top, mix it last time.
  7. In end add fried chicken and simmer it for 8 to 10 minutes.
  8. Delicious Kids Chicken Rice is ready.

Ingredients for Italian Fish Tomato:

  • Fish fillet 1/2 kg
  • Oil 1/4 cup
  • Onion chopped 1
  • Garlic 3-4 cloves
  • Tomato puree 5 tbsp
  • Parsley chopped 1/4 bunch
  • Oregano 1/2 tsp
  • Curry leaves 2
  • Tomatoes (boiled) 2
  • Sugar 1/2 tsp
  • Fresh cream 2 tbsp
  • Salt to taste
  • Black pepper powder 1/2 tsp

Method:

  1. Heat oil in karahi pan and add onion and garlic.
  2. When fry slightly and change its color then add fish cubes and roast it for 1 to 2 minutes.
  3. When fish is slightly cook, take out and keep it aside.
  4. Then in this karahi pan, add tomato, tomato puree and cook it for 2-3 minutes.
  5. Then add oregano, parsley chopped, curry leaves, sugar, salt, black pepper and 1/4 cup water, cover it and cook it on low flame.
  6. After 5 to 6 minutes, remove the cover, add fried fish, add fresh cream, mix it on high flame, take out and serve.
