Pineapple Custard Cups, South Indian Chicken Curry And Three Colored Rice by Rida Aftab

Ingredients for Pineapple Custard Cups:

  • Pineapple 1 cup
  • Sugar 1/2 cup
  • Flour 2 tbsp
  • Salt 1 pinch
  • Eggs yolk 3
  • Egg white 3
  • Mutton 2 tbsp
  • Pineapple juice 1/2 cup
  • Lemon juice 2 tbsp
  • Lemon zest 1 tsp
  • Milk 1 cup

Method:

  1. Beat sugar, flour, salt, pineapple juice, lemon juice, milk and butter with beater in one pot.
  2. Now beat eggs yolks and egg whites separately.
  3. Now fold milk and flour mixture in egg yolks and egg whites.
  4. Now put pieces of pineapple and lemon zest and fold it.
  5. Now grease the ramequin and put the mixture in it.
  6. Put the water in oven tray and first heat oven on 180 degrees C before 30 minutes.
  7. Then keep custard bowls and bake for 45 minutes.

Ingredients for South Indian Chicken Curry:

  • 1 kg chicken karahi piece
  • 2 chopped onions
  • 1 tbsp ginger garlic paste
  • 4 tomatoes
  • 4 green chillies
  • Coriander leaves as required
  • 1 tsp turmeric
  • 1 tsp coriander powder
  •  2 tsp fennel seeds
  • 1 tsp cumin
  • 1 tsp crushed black pepper
  • 1 tsp all spice powder
  • 1 piece of cinnamon
  • 4 cloves
  • 4 star anise
  • Salt as required
  • 1/2 cup oil
  • 2 tsp red chilli

Method:

  1. Heat oil in pan and fry onion until light reddish.
  2. Now add ginger garlic paste, turmeric, salt, cumin, red chili, fennel seeds, coriander, cinnamon, all spice powder, star anise, clove and red chili with water, put onions and roast it for few minutes.
  3. Then add tomatoes and green chilies in chicken karahi and cook it by covering it for 20 minutes.
  4. When the chicken is tendered, turn off the stove and serve it.

Ingredients for Three Colored Rice:

  • 3 cups rice
  • 1 bunch coriander
  • 250 grams spring onion
  • 2 green chilies
  • 1/2 tsp orange color
  • 1 tsp red chili powder
  • 1 tsp turmeric
  • 2 cups tomatoes
  • 3 tsp black pepper
  • 1 1/2 tsp salt
  • 2 potatoes
  • 6 tbsp oil

Method:

  1. Heat 2 tbsp oil in pan, put green coriander, green chilies, spring onions, black pepper, salt and 1 cup rice and mix it.
  2. Now heat 2 tbsp oil and add tomatoes.
  3. Then add chopped red chilli, black pepper, salt, dissolve food color in water, add it and add 1 cup rice and mix it.
  4. After it, heat 2 tbsp oil, add small pieces of potatoes and fry it
  5. When the potatoes are tendered, add black pepper, salt and 1 cup rice and mix it.
  6. Then make first layer of yellow rice, one layer of green rice and one layer of white rice in one separate pan and simmer it for 10 minutes.
  7. Three Colored Rice is ready.
