Achari Dalcha, Chicken Cheese Kabab And South Indian Coconut Rice by Rida Aftab

Ingredients for Achari Dalcha:

  • 1/2 kg mutton
  • 1 cup gram lentils
  • 1 cup red lentils
  • 2 tsp ginger garlic paste
  • 250 grams blended tomatoes
  • 1/2 cup tamarind juice
  • 1 onion
  • 10 curry leaves
  • 1/2 bunch coriander leaves
  • 6 green chilies
  • 6 red chilies
  • 2 tsp red chili powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 4 small cardamoms
  • 2 cloves
  • 1 pieces of cinnamon
  • 1/2 kg bottle gourd
  • 1/2 cup oil
  • 1 tsp mustard
  • 1 tsp onion seeds
  • 1 tsp fennel seeds
  • 1 tsp fenugreek

Method:

  1. In one clay pot, put mutton,  ginger garlic paste, salt, turmeric, red chili, cloves, small cardamoms, cinnamon, cumin and 1 glass water, cover it and cook it.
  2. When the mutton is tendered, add gram lentil, red lentils and 1 glass hot water and cook at low flame.
  3. When the lentils are tendered, add bottle gourd, green chilies and tamarind juice and turn off the stove. Heat oil in another pan, add whole red chili, curry leaves, mustard seeds, nigella seeds, fennel seeds and fenugreek seed and gibe bhagaar.

Ingredients for South Indian Coconut Rice:

  • 1/2 kg rice
  • 1/2 cup boiled gram lentils
  • 1//2 cup tur daal
  • 6 dry chilies
  • 6 curry leaves
  • 1 tsp mustard
  • 1 cup desiccated coconut
  • 1 tsp turmeric
  • 1/2 tsp salt
  • 1 onion
  • 1 tsp crushed red chili
  • 1/2 cup oil

Method:

  1. Heat 4 tbsp oil in pan and fry onion until brown.
  2. Now put add salt, turmeric, boiled gram lentils and tur daal.
  3. When it boils, add rice and water, cook until water dries. Now keep on simmer
  4. Heat remaining oil in frying pan, put curry leaves, red chili, mustard seed and desiccated coconut and fry it.
  5. Then put in rice, mix it and sprinkle red chili on top.

Ingredients for Chicken Cheese Kabab:

  • 6 boneless breast
  • 1 egg
  • 1/2 tsp cumin
  • 1/2 tsp green cardamom
  • 1 tsp green chili paste
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tbsp coriander
  • 1/4 cup roasted gram flour
  • 1/4 tsp turmeric
  • 1 1/2 cup yogurt
  • 1/4 cup cream
  • 1 cup cheddar cheese
  • salt as required
  • 7-8 black pepper
  • Oil for frying

Method:

  1. In one bowl, add egg, cumin, green cardamom, green chili paste, garlic paste, ginger, coriander, roasted gram flour, turmeric and yogurt mix it.
  2. Then add cheese, salt, red chili and mix it.
  3. Then add chicken cubes and marinate for 30 minutes.
  4. Now put chicken cubes in skewers and grill it on grill pan until chicken is tendered. Then serve it hot.
