Ingredients for Chatpat Shaljum Chicken:
Chicken 1 or 16 pieces
Red chili Flakes 1 tbsp
Turnip 1/2 kg
Turmeric 1 tsp
Salt to taste
Green chilies 8
Sugar 1 tsp
Lemons 4
All spice powder 1 tsp
Yogurt 1/2 cup
Black pepper 1 tsp
Green coriander 1 bunch
Ginger garlic paste 1 tbsp
Oil 1 cup
Method:
First cut the turnip into small cubes.
Wash chicken pieces properly and put into karahi pan.
Together put yogurt, ginger garlic paste and salt and dry water.
Now put oil, red chopped chili, turmeric and yogurt and roast it nicely.
Then fry turnip cubes and put in chicken.
After that add sugar, lemon juice, green chilies, green coriander and all spice powder and leave it for simmer.
When water of turnip dries, then remove it from stove after roasting it.
Delicious Chatpat Shaljum Chicken is ready.
Ingredients for Hara Masala Mutton Handi:
Mutton 1/2 kg
Yogurt 1 cup
Oil 1 cup
Green Coriander 2 bunch
Onion 3
Lemon 3
Garlic cloves 6
Green chilies 10
Black pepper 1 tsp
Butter 1 tbsp
Ginger garlic paste 1 tbsp
Cumin seed 1/2 tbsp
Salt to taste
Method:
Firstly, mix green coriander, garlic and green chilies and grind chutni.
In one pot, put yogurt, meat, ginger garlic paste and salt and boil it.
When water dries, remove it from stove.
Now heat oil in handi, fry onion until golden brown and take out half onion.
Add grinded chutni in half onions and fry it lightly.
Then add boiled meat and roast it nicely. Together add salt.
After that, add lemon juice, cumin, black pepper and butter and simmer it for 10 minutes.
In end, put half onions on top and serve with naan.
Ingredients for Lemon & Green Chillies Achar:
Lemons 8-10
White vinegar 1 cup
Green chilies 1/2 kg
Turmeric 1 tbsp
Black pepper 1 tbsp
Mustard powder 12 tbsp
Salt to taste
Method:
Wash 8- 10 lemons and dry it and make a cross and cut it.
Now wash green chilies, dry it and give cut to chili.
Then add salt, black pepper, chopped mustard and turmeric, mix them dry, fill in center of chilies and mix it with lemons.
After that, put into handi and mix well and place it in sunlight for 2 days.
Then place it inside before night and mix well.
Lemon and green achar will be ready in 3 to 4 days.
