CHOCOLATE MALTESER CAKE

Ingredients:

  • Soft brown sugar 150 gm
  • Caster sugar 100 gm
  • Eggs 3
  • Milk 175 ml
  • Unsalted butter 15 gm
  • Horlicks powder 2 tbsp
  • Plain flour 175 gm
  • Cocoa powder 25 gm
  • Baking powder 1 tsp
  • Baking soda 1/2 tsp

For Icing:

  • Icing sugar 250 gm
  • Cocoa powder 1 tsp
  • Horlicks 45 gm
  • Soft unsalted butter 125 gm
  • Maltesers to decorate

Method:

  1. Preheat the oven to 170C.
  2. Butter and line two 8" sandwich cake tins with butter paper.
  3. Whisk together the sugars and eggs until light and frothy.
  4. Heat the milk, butter and horlicks powder in a small saucepan until the butter has melted and the  mixture is hot but not boiling.
  5. Beat the milk mixture into the eggs a little at a time.
  6. Fold in the dry ingredients thoroughly.
  7. Divide the cake batter evenly between
  8. the two tins and bake in the oven for 25 minutes, till risen and will spring back when pressed gently.
  9. Let them cool on a rock for about 5-10 minutes and then turn them out of their tins.
  10. For the icing, put the icing sugar, cocoa and horlicks in the processor and whizz to remove all lumps.
  11. Add the butter and process again.
  12. Stop, scrape down, and start again, pouring the boiling water down the funnel with the motor running until you have a smooth butter cream.
  13. Sandwich the cold sponges with half of the butter cream and then ice the top with what is left, decorate with Maltesers.

PASTA IN MARINARA SAUCE

Ingredients:

  • Pasta boiled 2 cups
  • Tomatoes 2 cups
  • Tomato paste 3/4 cup
  • Parsley chopped 4 tbsp
  • Garlic, minced 1 clove
  • Dried oregano 1 tsp
  • Salt 1 tsp
  • Black pepper 1/4 tsp
  • Olive oil 6 tbsp
  • Onion 1/3 cup

Method:

  1. In a blender put tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt and pepper.
  2. Blend until smooth.
  3. In a pan, saute the finely chopped onion in olive oil for 2 minutes.
  4. Add the blended tomato sauce and simmer for 30 minutes, stirring occasionally.
  5. Pour over pasta and serve.

PASTA ALFREDO

Ingredients:

  • Cream 1 pint
  • Butter 1/2 cup
  • Parmesan cheese 1-1/2 cups
  • Pasta boiled 2 cups
  • Parsley, chopped 2 tbsp

Method:

  1. In a saucepan combine cream, butter and grated parmesan cheese.
  2. Cook over medium low heat until smooth.
  3. Remove from heat.
  4. Sauce will thicken upon standing.
  5. Pour over  pasta, sprinkle parsley and serve immediately.
