MUTTON DOBAY
Ingredients:
Mutton 1/2 kg
Onion 2
Ghee 1/2 cup
Yogurt 250 gm
Ginger garlic paste 2 tbsp
Chili powder 1 tbsp
Almond paste 25 gm
Mix whole spices as required
Poppy seeds 25 gm
Desiccated coconut 20 gm
Salt to taste
All spice powder 1/2 tsp
Tomato puree 3 tbsp
Nutmeg mace powder 1/2 tsp
Method:
Firstly, heat ghee and fry onion until red.
When red, add ginger garlic paste and mutton.
When mutton changes its color, then add red chili powder, tomato puree and yogurt and roast it for 1 to 2 minutes.
Then add all spice powder, mix whole spices, salt and 1-1/2 cup water, cover it and cook it.
When mutton tender, add almond paste, poppy seeds, coconut powder and nutmeg mace powder, roast it for 1 to 2 minutes and serve it.
SOUTH INDIAN CHICKEN
Ingredients:
Chicken with bones 1/2 kg
Oil 1/4 cup
Onion 1
Boiled tomatoes 2
Big green chilies 2-3
Cashew nuts 50 gm
Fresh cream 3- 4 tbsp
Tomato puree 1 cup
Ginger garlic paste 2 tbsp
Chili powder 1 tbsp
Turmeric 1 tbsp
Cardamom ground 6-8
Black cardamom 2
Cloves 1/2 tsp
Whole black pepper 1/2 tsp
Salt to taste
Method:
Firstly, heat oil in karahi pan and fry onion.
When golden in color, add ginger garlic paste and chicken and fry until golden in color.
Then add tomato puree, turmeric, red chili powder, salt as per taste and roast it for 2 to 3 minutes.
Now add black cardamom, cardamom ground, cloves, black pepper, tomatoes, chopped cashew nuts, half cup water and leave it for simmer.
Removes cover after 8 to 10 minutes, keeping on high flame, dry its water.
together add fresh cream and chopped green chilies along and roast it for 1 to 2 minutes and serve it.
PASTA RICE
Ingredients:
Boiled rice 300gm
Chicken breast 2
Boiled macaroni 1 cup
Sweet corn 1/2 cup
Boiled peas 1/2 cup
Carrot chopped 1
Crushed black pepper 1 tsp
Worcester sauce 1 tbsp
Soya sauce 1 tbsp
Oil 3-4 tbsp
Spring onion 2
Salt to taste
Capsicum chopped 1
Tomato ketchup 3 tbsp
Garlic paste 1 tbsp
Method:
Firstly, heat oil in karahi pan, add ginger garlic paste and chicken breast and fry until it changes its color and chicken is tender..
Then add chopped carrot, boiled peas, sweet corn, capsicum, salt and green onion, and mix it for 2 to 3 minutes.
Now add macaroni, tomato ketchup, worcester sauce, soya sauce and boiled rice, mix it nicely and serve it.
