Ingredients for Asian Chicken Pasta Salad:
Sesame seeds 1/4 cup
Pasta, boiled 2 cups
Oil 1/2 cup
Soya sauce 1/3 cup
Sesame oil 1 tsp
Sugar 3 tbsp
Ground ginger 1/2 tsp
Black pepper 1/4 tsp
Chicken boiled 3 cups
Fresh coriander 1/3 cup
Green onions 1/3 cup
Method:
Heat a pan and add sesame seeds, and cook stirring frequently until lightly toasted.
Remove from heat, and set a side.
In a jar with a tight- fitting lid, combine oil, soya sauce, sesame oil, sugar, sesame seeds, ginger and pepper. Shake well.
Pour sesame dressing over pasta, and toss to coat evenly.
Gently mix in chicken.
Ingredients for Mayo-free Cabbage Salad:
Oil 1/2 cup
Vinegar 1/4 cup
Soya sauce 1 tbsp
Sugar 6 tbsp
Cabbage shredded 8 oz
Spring Onions 3
Slivered almonds 3 cup
Sunflower seed 1/3 cup
Method:
Mix oil, vinegar, soya sauce, and sugar in a large bowl, mixing until sugar has dissolved.
Toss cabbage, green onions, almonds and sunflower seed kernels into the dressing.
Cover bowl and refrigerate at least 1 hour before serving.
Slaw taste better when chilled overnight.
Ingredients for Fruit Nut Gelatin Salad:
Crushed pineapple 2-1/2 cups
Orange flavored jelly 1 packet
Cream cheese 3 ounces
Olives chopped 1 cup
Cream 1 cup
Celery diced 1 cup
Walnuts chopped 1 cup
Method:
In a sauce pan, heat pineapple and juice over medium heat until boiling.
Add gelatin and stir to dissolve.
Remove from heat and refrigerate until partially set. In a small bowl, blend the olives into the softened cream cheese.
Mix the gelatin mixture and cream cheese together, and then fold in the whipped cream, nuts and celery.
Pour into a mold and chill until firm.
Ingredients for Potato Salad With Dressing:
Potatoes 3- 4
Mayonnaise 1/2 cup
Sour cream 1/2 cup
Mustard paste 2 tsp
Ketchup 1 tbsp
Worcestershire sauce 1-1/2 tsp
Onion diced 1/2 cup
Salt to taste
Black pepper to taste
Method:
Mix together the mayonnaise, sour cream, mustard, ketchup, worcestershire sauce, onion and salt, and pepper.
Refrigerate until ready to toss with cubed potatoes.
Serve on a bed of lettuce.
Ingredients for Russian Creamy Salad Dressing:
Mayonnaise 1 cup
Sour cream 1/2 cup
Ketchup 1/2 cup
Onion grated 2 tbsp
Mustard paste 1/2 tsp
Hot sauce 4 drops
Worcestershire sauce 1 tsp
Cream 2 tbsp
Fresh parsley minced 2 tbsp
Method:
In a bowl, whisk together the mayonnaise, sour cream, ketchup, onion, mustard,
hot sauce, worcestershire, cream and parsley until smooth.
Chill. Serve over salads, eggs, chilled veggies or meat.
Ingredients for Tangy Egg Salad:
Eggs 8
Mustard paste 1/2 cup
Mayonnaise 1/2 cup
Fresh basil 1/2 tsp
Fresh parsley 1/2 tsp
Garlic chopped 1 clove
Salt 1/2 tsp
Onion chopped 1 tbsp
Hot pepper sauce 1/2 tsp
Celery stick 1/2 cup
Method:
In a bowl, mix mustard, mayonnaise, basil, parsley, garlic, salt, onion, and hot pepper sauce.
Fold in eggs and celery.
Chill in the refrigerator until serving.
Ingredients for Buttermilk Ranch Dressing:
Buttermilk 1-1/3 cups
Mayonnaise 2/3 cup
Sour cream 2/3 cup
Lemon (juice) 1
Garlic powder 1 tsp
Onion powder 1 tsp
Spring onions 2 tsp
Fresh dill chopped 2 tsp
Fresh parsley 2 tsp
Salt 1 tsp
Black pepper 1/4 tsp
Method:
Whisk together the buttermilk, mayonnaise and sour cream in a bowl.
Stir in the garlic powder, onion powder, lemon juice, dill, parsley, salt and pepper.
Cover and refrigerate at least 30 minutes before serving.
