Ingredients for Chocolate Swiss Roll:
Eggs 3
Caster sugar 75 gm
Flour 50 gm
Cocoa powder 25 gm
For Filling:
Butter softened 75 gm
Icing sugar 125 gm
Chocolate grated to decorate
Method:
Set a bowl over pan of simmering water and add eggs and sugar, whisk 5 to 10 minutes till thick and creamy.
Remove from heat and stir in flour and cocoa and fold in.
Pour mixture in a greased and lined swiss roll tin.
Bake at 200 degrees for 10 minutes only, or fill springy to the touch.
Cover with damp tea towel and cool.
Turn the sponge out face down, onto a greaseproof sheet dusted with cocoa powder.
Peel the paper gently.
Whisk butter till creamy and beat in icing sugar, a little at a time, spread the mixture over the sponge.
Using greaseproof paper, roll up the swiss roll.
Chill and any left over cream can be piped in a line on top, sprinkle grated chocolate and slice and serve.
Ingredients for Chicken Sticks:
Chicken breast 2
Salt 1/2 tsp
Black pepper 1/2 tsp
Red chilli 1/4 tsp
Soya sauce 1 tbsp
Ketchup 1 tbsp
Chili sauce 1 tbsp
Vinegar 1/2 tsp
Garlic chopped 1 tsp
Oil 2-3 tbsp
For Sauted Vegetables:
Carrot 1 blanched
Potato boiled 1 large
Peas boiled 1/2 cup
Salt a pinch
White pepper a pinch
Soya sauce 1/2 tsp
Butter 1 tbsp
For White Sauce:
Butter 2 tbsp
Flour 1 tbsp
Milk 1/2 cup
Mustard paste 1/4 tsp
Salt a pinch
Black pepper 1/4 tsp
Cheese slices as required
Oregano leaves to sprinkle
Method:
For Steak: Mix the chicken with all ingredients mentioned above except oil.
Let it marinade for 2-3 hours.
Heat oil in a frying pan or grill pan.
Fry the marinade chicken got 3-4 minutes both sides until it's cooked through.
For Sauted Vegetables: Saute the boiled vegetables in butter on high flame.
Add the white pepper and soya sauce. Stir for a minute.
For White Sauce: In a sauce pan over low heat, melt butter, add flour and other seasoning, stir well with wire whisk.
Gradually add milk, whisk constantly.
Cook for 2-3 minutes until sauce begins to thicken.
Pour the white sauce over cooked steaks, put cheese slice and sprinkle oregano leaves on top.
Serve with sauted vegetables on the side.
Ingredients for Mint Dream Pie:
Chocolate 6 oz
Cream 10 oz
Mint essence 1/2 tsp
Icing sugar 1/4 cup
Shaved chocolate 1/2 cup
Cocoa powder 3 tbsp
Butter 3 tbsp
Chocolate cookies 1 packet
Method:
Mix melted butter with crushed cookies and let set in a large bowl.
Fold 1 cup cream into the melted and cooled chocolate.
Spoon the chocolate cream over the cookie crust.
In another bowl, blend the remaining cream, icing sugar and mint essence.
Fold in the shaved chocolate.
Spoon the cream mixture on top of the chocolate cream on the biscuit crust.
Dust lightly with the cocoa powder.
Refrigerate for 2-3 hours before serving.
