Ingredients for BBQ Biryani:
Chicken 1 kg
Rice 1 kg
Oil 1-1/2 kg
Ginger garlic 1 tbsp
Red chilli 1 tbsp
Salt to taste
Mix spices powder 1 tbsp
Cardamom 1 tsp
Cumin 1 tbsp
Mix spices whole as required
Bay leaf 2-3
Lemon 1-2
Yogurt 4 tbsp
Onion 4-5
Tomato 5-6
Green chilli 4-5
Green masala, mint as required
Nutmeg, mace powder 1 tsp
Tandoori color 1 tsp
Kewra as required
Method:
Marinate chicken breast with ginger garlic, red chilli, salt, mix spices powder, cardamom, lemon, yogurt, cumin, green chilli and tandoori color and keep for 5 to 6 hours.
Add salt, bay leaf, clove, cumin, green chilli and mint in rice and boil 2/4.
Heat oil and fry onion. When golden in color, put ginger garlic paste, salt, red chilli, roasted cumin, tomato and yogurt and roast masala.
Now add chicken and put nutmeg mace powder.
In end, put whole red chilli and mint and close the flame.
Make layer of masalay on rice. Add nutmeg mace powder, fried onion and kewra on top and give smoke of coal.
Now leave for simmer for 10 to 15 minutes.
Serve hot hot biryani with raita.
Ingredients for Tandoori Kabab Masala:
Mince undercut 1/2 kg
Coriander powder 2 tsp
Cumin 2 tsp
Onion paste 1
Green chilli paste 1 tsp
Ginger garlic 1 tsp
Soya sauce 1 tsp
Salt 1 tsp
Black pepper 1 tsp
Red chilli powder 1 tsp
Mix spices 1 tsp
Desiccated coconut 1 tsp
Gram flour 1 tsp
Method:
Mix all ingredients in mince and make long kabab.
Grill it or fry it.
Heat oil, cut onion, capsicum and tomato into cubes and fry it.
Now put salt, black pepper and soya sauce.
In end, add kabab and serve.
