Mushroom Sauce Pasta, Chicken Patties And Honey & Nut Clusters by Chef Shai

Ingredients for Mushroom Sauce Pasta:

  • Pasta 1 pack
  • Mushrooms 1 cup
  • Fresh mushrooms 1 cup
  • Onion 1 chopped
  • Thyme 1 tsp
  • Flour 1 tbsp
  • Butter 2 tbsp
  • Fresh red chilies 1 tbsp
  • Lemon juice 2 tbsp
  • Cream as needed
  • Brown sugar 1/2 cup
  • Salt n pepper as needed
  • Coriander for garnish

Method:

  1. Saute onion with butter, add flour and cook until golden brown, thyme, red chilies, lemon juice, cream blend everything to sauce consistency, season salt n pepper.
  2. Also add brown sugar if needed
  3. Saute fresh mushrooms separately and add to the sauce
  4. Add boiled pasta and serve hot.

Ingredients for Chicken Patties:

  • Chicken minced 1/2 kg
  • Onions 1 cup
  • Green chilies 5-6
  • Coriander 1 cup
  • Garam masala 1 tbsp
  • Salt as needed
  • Oil  shallow frying

Method:

  1. Combine onions, coriander green chilies in a chopper and fine chop.
  2. Mix with minced chicken, also combine garam masala and salt .
  3. Shape into round patties shallow fry until golden and cooked.

Ingredients for Honey & Nut Clusters:

  • Sugar 1 cup
  • Honey 2 tbsp
  • Vanilla Essence 1 cup
  • Foil sheet 1 tsp
  • Mixed Nuts greased

Method:

  1. Melt sugar in a non stick pan when golden, add honey, nuts and vanilla essence.
  2. Stir well and pour over foil sheet to spread evenly.
  3. Let cool remove foil and break into bit size pieces.
