Cheesy Tikka Lasagna, Shami Kabab And Khara Masala Chicken by Zubaida Tariq

Ingredients for Khara Masala Chicken:

  • Chicken (12 pieces) 1
  • Yogurt 1/2 cup
  • Chopped onion 2
  • Fennel seeds 1 tsp
  • Coriander seeds 1 tsp
  • Big cardamom 3
  • Black pepper 6
  • Red chilies 8
  • Garlic 8 cloves
  • Chopped ginger 2 tbsp
  • Turmeric 1 tsp
  • Salt to taste
  • Green chillies 4
  • Oil 1 cup

Method:

  1. Heat oil in pot, fry onions until golden brown and spread on tissue paper for making it crispy.
  2. After taking out onions, put chicken piece, turmeric and salt in pot.
  3. When water of chicken dries, put crushed onions.
  4. Together put yogurt, red chili powder, fennel seeds, whole coriander, small cardamom, black chili powder, garlic and ginger and roast it.
  5. When oil starts to separate, add onion and water and simmer it on low flame.
  6. Delicious white khara masala chicken is ready.

Ingredients for Cheesy Tikka Lasagna:

  • Lasagna pasta 1 packet
  • Boneless chicken 1 kg
  • Mushrooms 1 tin
  • Tomato paste 1 tin
  • Tomato ketchup 1 cup
  • Mozzarella cheese 1 packet
  • Cheddar cheese 1 packet
  • Onion 2
  • Chopped tomatoes 3
  • Black pepper 1 tsp
  • Carom seeds 1 tsp
  • Sugar 1 tsp
  • Ginger garlic paste 1 tbsp
  • Tikka masala 2 tbsp
  • Soya sauce 1 tbsp
  • Crushed red chilli 2 tbsp
  • Oil as required
  • Salt to taste

For White Sauce:

  • Milk 1 liter
  • Wight pepper 1 tsp
  • Butter 2 tbsp
  • Flour 4 tbsp
  • Salt to taste

Method:

  1. Firstly, heat water in pot, boil lasagna sheets and add 2 tbsp oil.
  2. When  boiled, take out, wash with cold water, put oil and keep aside.
  3. Now put boneless chicken, ginger garlic paste, tikka masala and salt in karahi pan and cook it.
  4. When water of chicken dries, put soya sauce, chopped red chili and half cup tomato ketchup.
  5. Then in one pot, heat butter, put flour, roast it lightly and turn off stove.
  6. When white sauce becomes thick, add salt and white pepper when cool and mix it
  7. Heat oil in pan, put tomato, onion and salt and cook for 5 minutes and remove from stove.
  8. Then grate mozzarella cheese and cheddar cheese.
  9. Then heat oven.
  10. Then put some sauce in big and broad dish and keep lasagna sheets.
  11. Then make one layer of mince, mushroom, tomato ketchup, tomato puree, then put onion, tomato sabzi, carom seeds and red chili and make another layer like this.
  12. Put grated cheese on top.
  13. Now sprinkle carom seeds and red chili and bake in oven for half an hour.
  14. When golden brown on top, serve delicious cheesy tikka lasagna.

Ingredients for Shami Kabab:

  • Beef 1/2 kg
  • Gram lentils 1 cup
  • Whole red chilli 8
  • Black pepper corn 6
  • Small cardamom 2
  • Cinnamon 1 stick
  • Garlic 4 cloves
  • Ginger 1 small piece
  • Coriander seeds 1 tsp
  • White cumin 1 tsp
  • Salt to taste
  • Yogurt 1 tsp
  • Green coriander 1 bunch
  • Mint leaves 1 bunch
  • Green chillies 4
  • Onion 1
  • Chopped ginger 1 piece
  • Egg whites 2
  • Corn flour/Rice flour  2 tbsp
  • Oil to fry

Method:

  1. Firstly, put washed beef boti in a pot.
  2. Together put gram lentils, garlic clove, ginger, small cardamom, black pepper, red chili powder, salt, coriander seeds, white cumin and 2-1/2 cup warm water and cook it.
  3. When beef and lentils are tendered, add yogurt.
  4. When water dries, put in chopper and grind it.
  5. Then put chopped green coriander, chopped mint, green chilies, chopped onion, chopped ginger, corn flour or rice flour and egg white and mix it well.
  6. After that, make kababs by oiling your hands, heat oil in frying pan and fry kababs.
  7. When golden brown, take out and serve hot.
