Mutton Chops, Kaleji Masala, Bihari Masala And Imli Ki Sauce by Rida Aftab

Ingredients for Mutton Chops:

  • 1 kg mutton chops
  • 8 tbsp ginger garlic paste
  • 2 tbsp red chili powder
  • 1/2 tsp nutmeg
  • 2 tbsp all spice powder
  • 10-12 grinded green chilies
  • 1 cup yogurt
  • 1 tbsp papaya paste
  • 1/2 bunch coriander
  • Mint leaves few
  • Salt as required
  • 2 tbsp oil

Method:

  1. Firstly, paste papaya paste on mutton chops and mix it well.
  2. After that, add yogurt, ginger garlic paste, nutmeg, red chili powder, all spice masala, green chili and oil and mix it well.
  3. Now add mutton chops. Then put green coriander, mint and salt and mix it more.
  4. Then put these chops in skewers and grill it.
  5. When chops are ready, serve with raita and green salad.

Ingredients for Kaleji Masala:

  • 1 tsp all spice powder
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tbsp fenugreek leaves
  • 1/2 tsp tatri
  • 2 tsp carom seeds
  • 2 tsp crushed cumin
  • 2 tsp whole coriander
  • 2 tbsp crushed red chili

Method:

  1. Mix chopped garam masala , salt, garlic fenugreek seeds, tatri, carom seeds, crushed cumin, whole coriander, crushed red chilli and fill in bottle.
  2. Its enough for 1 kg kaleji.

Ingredients for Bihari Masala:

50 grams whole red chilies
50 grams cumin
50 grams coconut
50 grams poppy seeds
1 tsp salt
1 tbsp kachri powder
1 tbsp black pepper
1 tbsp carom seeds
1 tbsp all spice powder
1/2 tsp mace nutmeg

Method:

  1. Grind cumin, whole red chilies, carom seeds, poppy seeds and mace nutmeg.
  2. Now add salt, kachri powder, chopped black pepper, chopped coconut, poppy seeds and all spice powder, mix it nicely and fill in bottle.
  3. This masala can be used in 2 kg mutton.

Ingredients for Imli Ki Sauce:

  • Tamarind pulp 250 gm
  • Water 1/2 liter
  • Jaggery 50 gm
  • Toasted carom seeds 1 tsp
  • Salt 1 tsp
  • Red chili powder 2 tsp
  • Toasted cumin 2 tsp
  • Toasted ginger powder 1/2 tsp
  • Corn flour 2 tbsp

Method:

  1. Firstly, soak tamarind pulp in water for 2 hours, after that, crush it with hand, strain it and take out seed.
  2. Now add salt and red chili powder in tamarind water, cook it well and add jaggery.
  3. When jaggery is dissolved, add mixture of corn flour dissolved in water and when thick turn off stove.
  4. In end, add cumin, toasted ginger powder and toasted carom seeds, grind it and mix it.
  5. Delicious tamarind sauce is ready.
