Bohri Kabab, Chaat Masala, Lal Chutney, Tikka Masala And Ras Malai by Rida Aftab

Ingredients for Bohri Kabab:

  • 1/2 kg minced meat
  • 1 cup milk
  • 1 fried onion
  • 1 egg
  • 2 bread slices
  • 2 raw onions
  • 2 boiled potatoes
  • 1/2 bunch mint
  • 1 tsp crushed red chili
  • 1 tsp black pepper
  • 1 green chili
  • 1 tsp ginger garlic
  • 1 tbsp soya sauce
  • Oil for frying
  • salt as required

Method:

  1. Firstly mix onion, red chili powder, black pepper, ginger garlic paste, soya sauce and salt in mince and marinate for 10 minutes.
  2. Then put in pot, cover it and cook for 10 minute.
  3. Then do high flame and dry water.
  4. Now add onion, boiled potatoes, green chili, egg, soaked bread pieces in milk, and mint mix them it.
  5. After that, give the shape of kabab and shallow fry it.
  6. Bohri kabab is ready.

Ingredients for Chaat Masala:

  • 50 grams fennel seeds
  • 50 grams cumin
  • 50 grams whole coriander
  • 50 grams button chillies
  • 50 grams black salt
  • 1 tsp tatri
  • 1 tbsp carom seeds
  • 1 tbsp black pepper
  • 1 tsp crushed red chili
  • 1 tsp black pepper
  • 1 green chili
  • 1 tsp ginger garlic
  • 1 tbsp soya sauce
  • Oil for frying
  • Salt as required
  • 1/2 tsp noshadar
  • 1/2 tsp asafetida
  • 1/2 tsp mint

Method:

  1. Grind fennel seeds, cumin, whole coriander, button chilies, black salt, tatri, carom seeds, black pepper, noshadar, asafetida and mint in grinder.
  2. Chat masala is ready.

Ingredients for Lal Chutney:

  • 12 red chili
  • 1 clove of garlic
  • 1 cup tamarind pulp
  • 1/2 cup tomato ketchup
  • 1 tbsp jaggery
  • 1/2 tsp salt
  • 2 tsp roasted cumin

Method:

  1. Firstly soak red chillies overnight.
  2. Then put it together with garlic clove, tomato ketchup, tamarind pulp, jaggery, salt and roasted cumin in grinder and grind it nicely.
  3. Tasty lal chutney is ready.

Ingredients for Tikka Masala:

  • 1 tsp black pepper
  • 1 tbsp red chili
  • 2 tsp chaat masala
  • 1/2 tsp tatri
  • 1/2 tsp salt
  • 2 tsp carom seeds
  • 4 tbsp cumin
  • 1 pinch of orange color

Method:

  1. Roast cumin and carom seeds on tawa and grind it.
  2. Now add tatri, salt, red chili powder, pinch of yellow color, chopped red chilli and chaat masala mix them.
  3. Then fill in bottle.
  4. This masala is enough for 2 kg chicken tikka or beef tikka.

Ingredients for Ras Malai:

  • Milk 1 liter
  • Egg white 1
  • Powdered milk 1 cup
  • Almond & Pistachio 50 gm
  • Sugar 1/2 cup
  • Kewra 1 tsp
  • Corn flour 1 tbsp
  • Baking powder 1/2 tsp
  • Cardamom powder 1/4 tsp
