Ingredients for Dahi Gosht:
Meat 500 gm
Yogurt 500 gm
Ground pepper 1 tsp
Salt to taste
Turmeric powder 1 tsp
Garlic paste 3 tbsp
Ginger paste 3 tbsp
Green chilies 3
Vegetable oil 3 tbsp
Onions, sliced 2
Garam masala 3 tbsp
Coriander powder 3 tsp
Cumin powder 3 tsp
Bay leaves 4
Tomatoes diced 500 gm
Mint leaves 3 tbsp
Coriander leaves 3 tbsp
Method:
Mix salt, pepper, yogurt, turmeric powder, half the ginger and garlic pastes and
green chilies together.
Marinate the meat in this mixture for 30 minutes.
Heat oil in a deep pan and fry onions and remaining ginger and garlic paste till fragrant.
Add the tomatoes, cumin powder, bay leaves, and coriander powder and garam masala and continue to fry till the oil separate from the mixture.
Add the merinated meat and cook till most of the liquid has evaporated.
Garnish with chopped coriander and mint leaves.
Ingredients for Qeema Roll:
Mutton mince 500 gm
Yogurt 3/4 cup
Garlic paste 1/2 tbsp
Red chili powder 1 tsp
Garam masala 1/2 tsp
Salt to taste
Oil 2 tbsp
Coriander 8 tsp
Chili sauce 1 tsp
Tomato sauce 1 tsp
Onions 2 medium
Lemon juice 2 tbsp
Chaat masala 2 tsp
Roti or paratha as required
Method:
Mix together yogurt, garlic paste,, ginger paste, red chili powder, garam masala, powder and salt.
Marinate mutton mince in this marinate for about thirty to forty minutes.
Heat oil in a pan.
Add marinated mince and cook on medium heat till the mince is cooked and dry.
Fry parathas in little oil and set aside.
Spread a teaspoon of coriander and mint chutney on each roti, dribble some chili sauce and tomato sauce.
Place one portion of mince, some onion rings and sprinkle lemon juice and chaat masala.
Roll up the rotis and serve the rolls immediately.
Ingredients for Firni:
Milk 1 liter
Condensed milk 1 small
Sugar 4-5 tbsp
Rice flour 1/2 cup
Pistachios & almonds a handful
Kewra essence 1 tsp
Green cardamom 4
Method:
In a pot add milk and cardamom seeds, rice flour and sugar.
Leave on a very low flame to cook and keep stirring.
When the mixture thickens, add kewra essence and remove from heat.
Garnish with dry fruits.
