Ingredients for Bihari Keema:
Mince 1/2 kg
Yogurt 1 cup
Poppy seeds 1 tbsp
Desiccated coconut 1 tbsp
Button red chilies 12
Cloves 3
Green cardamom 3
Cinnamon sticks 2
Ginger garlic paste 1 tbsp
Salt 1 tsp
Nutmeg grinded 1/4 tsp
Mace grinded 1/4 tsp
Brown onion 3 tsp
All spice 1 tsp
Raw papaya 1 tbsp
Ghee or Oil 1/2 cup
For Paratha:
Flour 2 cups
Instant yeast 1 tsp
Sugar 1 tsp
Ghee 1 tbsp
Salt 1/4 tsp
Powder milk 1 tbsp
Method:
First, roast crushed poppy seeds.
Now put chopped coconut, small cardamom, cloves, cinnamon sticks and green cardamoms and grind it.
Then marinate mince with raw papaya, ginger garlic paste for 2 hours.
Now heat ghee, put roasted masala, water and salt and fry for few minutes.
Then put marinated mince, mix it, add yogurt, cover it and cook on low flame, so that water dries.
Now add brown onions and garam masala. Then simmer with coal, garnish with green chilies and green coriander and serve with cheesy paratha.
For making paratha: Mix flour, yeast, sugar, ghee, salt and powder milk, knead it and leave for 1 hour.
Now make parathay and fry on tawa.
Ingredients for Mutton Adla Biryani:
Mutton adla 1 kg
Ginger 2 tbsp
Garlic chopped 2 tbsp
Yogurt 1/2 cup
Cloves 6
Green cardamom 8
Black pepper 8
Salt 1-1/2 tsp
Water 4 cups
Saffron 1/2 tsp
Kewra water 1 tbsp
Sela rice 750 gm
Ghee 1 cup
Yogurt 1 cup
Ginger Julian 1 tbsp
Cumin whole 1 tbsp
Mace grinded 1/4 tsp
Green chillies 15
Mint 1 bunch
Coriander half bunch
