Ingredients for Besan Ka Halwa:
Milk 1 cup
Water 1/2 cup
Cardamom ground 1/2 cup
Ghee 3/4 cup
Gram flour 1 cup
Sugar 1 cup
Method:
Bring the milk and water to a simmer in a saucepan over medium heat, stir
the cardamom into the mixture.
Set aside Melt the ghee in a pan over medium heat, stir the chickpeas flour into the melted ghee and cook until fragrant, about 10 minutes.
Add the sugar and stir to mix well.
Slowly pour the milk mixture into the pan while stirring to avoid lumps.
Continue cooking and stirring until the halwa pulls away from the sides of the pan, 10 -15 minutes.
Serve hot or spread the mixture into a tray and allow to cool.
Cut into squares and serve.
Ingredients for White Mutton Korma:
Mutton pieces 1 kg
Yogurt 1/2 kg
Almonds paste 1/2 cup
Cream 1/2 cup
All spice powder 1 tsp
Nutmeg powder a pinch
White pepper powder 1 tbsp
Ginger garlic paste 2 tbsp
Cinnamon sticks 2
Black cardamoms 3
Green cardamoms 8
Cloves 6
Onion ground 1 large
Oil or ghee 5 tbsp
Salt to taste
Green chilies paste 2 tbsp
Method:
Heat oil in a pan, add cloves, cinnamon, black and green cardamoms cook till they
sizzle.
Add meat and cook for 5 minutes or till it changes color.
Now add ginger garlic and onion paste.
Cook till oil separates, mix yogurt, white pepper salt, all spice powder, nutmeg and green chilies paste in a bowl.
Add cream and almond paste to the pol and cook for another 3-4 minutes.
Garnish with coriander leaves and serve.
Ingredients for Sweet & Sour Boti:
Mutton boneless 1/2 kg
Onion 2
Ginger garlic paste 1 tbsp
Salt 1 tsp
Chili powder 1 tbsp
Cumin powder 1/2 tsp
Worcestershire sauce 1 tbsp
Sugar 1 tsp
Oil 3 tbsp
Lemon 1
Coriander leaves for garnish
Green chilies for garnish
Method:
Heat oil in a pan, add chopped onion and saute till golden brown, then add in 1 tbsp chili powder, 1 tsp salt, ginger garlic paste, 1/2 tsp cumin powder and 1 tsp sugar.
Also add a little water, saute for a few minutes.
Now add mutton meat cut into small cubes, also add required water and cook till meat is tender.
Lastly add 1 tbsp worcestershire sauce and lemon juice.
Fry well till water dries.
Dish it out, garnish with coriander leaves and chopped green chilies.
