Darbari Pulao And Sunheri Kabab by Chef Gulzar

Ingredients for Darbari Pulao:

  • Mutton 1 kg
  • Ginger garlic paste 2 -3 tbsp
  • Onion 2
  • Big cardamom 4-5
  • Fennel seeds 1 tbsp
  • Cumin seeds 1 tbsp
  • Coriander seeds 2 tbsp
  • Cinnamon 2-3 sticks
  • Star anise flower 2-3
  • Clarified butter 1/2 cup

For Pulao:

  • Rice 1/2 kg
  • Yogurt 1 cup
  • Bay leaves 3
  • Onion (brown) 3
  • Vinegar 2 tbsp
  • Small cardamoms 8
  • Crushed black pepper 1 tsp
  • Green chilies 6-8
  • Clarified butter 1/2 cup
  • Salt to taste

Method:

  1. Method for making mutton and stock: Firstly, put ghee and onion in one pan and make onion brown.
  2. Now add ginger garlic paste, add mutton and roast it well until mutton and oil is separated.
  3. Now make bag, put green coriander, fennel seeds, whole coriander, white cumin, star anise flower and cinnamon, put in pot, add water and cook until mutton tenders.
  4. Now separate mutton and stock and waste bag.
  5. Method for making bhagaar: Now add ghee and onion and make onion brown.
  6. Take out half onions and spread it on tissue paper and half onions should remain in pan.
  7. Then add black pepper, small cardamoms, bay leaves and green chillies and roast for 2 to 3 minutes.
  8. Now add mutton and beaten yogurt.
  9. When yogurt is roasted, ghee is separated then add stock.
  10. When stock is boiled, add rice, cover it and cook it.
  11. When water of rice dries, put remaining onions and vinegar and simmer it.
  12. When the simmered is completed, take out in dish and serve.

Ingredients for Sunheri Kabab:

  • Tongue meat 250 gm
  • Beef mince 250 gm
  • Red chili flakes 1-1/2 tbsp
  • Cumin seeds 1 tsp
  • Coriander seeds 1 tsp
  • Crushed black pepper 1 tsp
  • Ginger garlic paste 1 tbsp
  • Chopped green chilies 4-5
  • Chopped green coriander 1/2 bunch
  • Chopped mint leaves 1/2 bunch
  • Bread crumbs 4 tbsp
  • Egg 1
  • Oil to fry
  • Salt to taste

Method:

  1. Firstly, put tongue meat, beef mince, red chili flakes, whole cumin, whole coriander, chopped black pepper, ginger garlic paste, green chilies, green coriander, chopped mint, bread crumbs, egg and salt in chopper, mix it nicely and make paste.
  2. Now take out in one plate, put oil on hands, make kababs.
  3. Then heat oil in pan and fry kababs .
  4. Now take out in serving dish, garnish with salad leaves and tomatoes and serve.
