Delhi Creamy Gosht And Degi Maghaz Masala by Chef Gulzar

Ingredients for Delhi Creamy Gosht:

  • Beef 1/2 kg
  • Cream 5 tbsp
  • Yogurt 3 tbsp
  • Garlic 5-6 cloves
  • Cinnamon 2  
  • Tomato 2
  • Stock 3 cups
  • Pistachio 1/2 cups
  • Green chilies 6-7
  • Chopped onion 2
  • Chopped ginger 1 pieces
  • All spice powder 2/4 tsp
  • White pepper 3/4 tsp
  • Fennel seeds 1 tsp
  • Turmeric 1/2 tsp
  • Small cardamom 1 tsp
  • Chopped coriander 2 tbsp
  • Oil as required
  • Salt to taste

Method:

  1. Firstly, boil pistachios, let them cool and peel it.
  2. Now put pistachios, cream ans green chilies in blender, make paste of it and mix it in yogurt.
  3. Heat oil in one pot and fry onion.
  4. When its color changes, put ginger, garlic chopped garam masala, turmeric, sugar white vinegar and fennel seeds and fry it for 2 minutes.
  5. Then add mixture of pistachio, fry it, put beef and roast it.
  6. Now add tomatoes, green chilies, stock and salt and cook it.
  7. When beef is tendered well and gravy is ready, garnish with chopped coriander and small coriander.
  8. Delhi Creamy Gosht is ready.

Ingredients for Degi Maghaz Masala:

  • Brain 2
  • Tomatoes 2
  • Crushed cloves 1/2 tsp
  • Crushed cinnamon 1 tsp
  • Crushed big cardamom 1 tbsp
  • Crushed small cardamom 1 tsp
  • Red chili flakes 2 tbsp
  • Crushed black pepper 1 tsp
  • Crushed coriander 1 tbsp
  • Crushed cumin seeds 1 tbsp
  • Turmeric powder 1 tsp
  • Ginger garlic (chopped) 2 tbsp
  • Green coriander 1 bunch
  • Green chilies 5-6
  • Mint leaves 1/2 bunch
  • Oil 1/2 cup
  • Salt to taste

Method:

  1. First, make paste of chopped mint, chopped coriander and green chilies.
  2. Put turmeric and water in one pot, boil it, put brain and boil again for 4 to 5 minutes, strain it and keep it aside.
  3. Now heat oil in one pan, saute chopped cloves, chopped cinnamon, big cardamom and chopped small cardamom.
  4. Then add ginger garlic and fry it.
  5. After that add green coriander, whole red chili, chopped black pepper and chopped cumin and roast it nicely.
  6. When masala dries, put tomatoes, salt and turmeric powder and cook until tomatoes is tender.
  7. Now put pieces of brain, also add garam masala and fry on high flame
  8. In end, garnish with green chilies.
  9. Desi Maghaz Masala is ready.
