Been Pasta, Cantonese Style Chicken And Cantonese Prawn by Chef Zakir

Ingredients for Cantonese Prawn:

  • Jumbo prawns 1/2 kg
  • Oyster sauce 1 tbsp
  • Soya sauce 1 tbsp
  • Black mushrooms 2-3
  • Vinegar 1 tbsp
  • Corn flour 1 tbsp
  • Oil 3 tbsp
  • Garlic chopped 3-4 cloves
  • Ginger chopped 1
  • Spring onion chopped 2
  • Button mushrooms sliced5-6
  • Bamboo shoot 1
  • Salt to taste
  • Crushed black pepper 1 tsp

Method:

  1. Firstly, wash jumbo prawns and keep it aside.
  2. Now heat oil in karahi pan, add chopped ginger and garlic and fry until golden.
  3. Then add prawns in it and fry until it color changes.
  4. After that, add soya sauce, worcestor sauce and vinegar.
  5. Then add green chilies, bamboo shoot, button mushroom slices, black mushroom and mix for 2 minutes.
  6. Then add salt, chopped black pepper and water.
  7. Now mix corn flour in water, make sauce thick and serve hot.

Ingredients for Been Pasta:

  • Capsicum chopped 1
  • Boiled penne pasta 1/4 packet
  • Red beans 1/2 cup
  • White beans 1/2 cup
  • Peas boiled 1/2 cup
  • Oil 3-4 tbsp
  • Onion chopped 1
  • Garlic chopped 3-4 cloves
  • Bay leaves 2
  • Oregano 1/2 tsp
  • Thyme 1/2 tsp
  • Red grapes nectar 1/2 cup
  • Tomato paste 2 tbsp
  • Celery stick 1 sliced
  • Capsicum 1
  • Button mushroom 1/2 cup
  • Boiled chopped tomatoes 2
  • Brown sugar 1 tsp
  • Salt to taste
  • Crushed Black pepper 1/2 tsp
  • Parmesan cheese as required

Method:

  1. Firstly, heat oil in karahi pan, add chopped garlic and chopped onion and cook until it becomes soft.
  2. Then add red beans, white beans, peas and bay leaves and cook for 2 minutes.
  3. Now add oregano, thyme, chopped tomato, chopped capsicum and celery stick slices.
  4. After cooking 1 to 2 minutes, add tomato paste, red grapes nector, slice button, brown sugar, salt and chopped black pepper and mix nicely on high flame.
  5. In end, sprinkle parmesan cheese and serve.

Ingredients for Cantonese Style Chicken:

  • Chicken Thai boneless 1/2 kg
  • Black mushrooms 2-3
  • Button mushrooms 8-10
  • Oil 3-4 tbsp
  • Garlic paste 1 tbsp
  • Baby corn 4-5
  • Bamboo shoots 1 medium
  • Spring onion 2
  • Fish sauce 1 tbsp
  • Oyster sauce 1 tbsp
  • Water 1/4 cup
  • Corn flour 1 tbsp
  • Brown sugar 1 tsp
  • Salt to taste
  • Black pepper powder 1/4 tsp

Method:

  1. Firstly, cut chicken thigh boneless into Juline.
  2. Also cut baby corn, black mushroom and button mushroom in long pieces.
  3. Heat oil in pan, add garlic paste. When garlic paste starts to cook, then add chicken and fry until it becomes golden.
  4. Then add bamboo shoot of medium size, button mushroom, black mushroom, green chilies and baby corn, mix it and cook it for 2 minutes.
  5. Then add fish sauce, brown sugar, oyster sauce, salt and black pepper and cook more for 2 minutes.
  6. Now add water, dissolve corn flour in some water and make sauce thick.
  7. Serve hot with any type of rice.
