Ingredients for Shahi Bara Paya:
Beef trotters 1-2
Ginger garlic paste 2 tbsp
Garlic 4-5 cloves
Ginger 1 inch
Onion 2
Yogurt 1/2 cup
Star anise 2
Papaya masala 3 tbsp
Oil/ Clarified butter 1/2 cup
Salt to taste
For Serving:
Green coriander as required
Green chilies as required
Lemon slices as required
Onion (brown) 1/2 cup
Method:
Firstly, wash beef trotters nicely.
Put them in pot and add onions.
Put crushed ginger garlic.
Then add star anise and water and cook on high flame.
When it starts to boil, low down its flame.
Then cook until trotters are tendered.
When trotters are completely tendered, then strain it.
Separate trotters and stock and waste all other ingredients.
Put oil in pan and heat it.
Now add ginger garlic paste and onion in one mixing bowl and fry it.
Then add yogurt and roast it.
Put paaya masala and salt, mix it nicely and cook it.
Then put in trotters immediately.
Take out in dish, garnish with green coriander, green chilies, brown onion and lemon slices and serve.
Ingredients for Shahi Bara Paya:
Nutmeg 1
Mace 1 tsp
Big cardamom 1 tbsp
Small cardamom 8-10
Cinnamon 3-4 sticks
Cloves 6-8
Coriander seeds 6 tbsp
Black cumin seeds 4 tbsp
White cumin 6 tbsp
Talhar mirch 50 gm
Whole red chilies 50 gm
Method:
Put all ingredients on tawa, roast it lightly, put in blender and blend it
Paya masala is ready.
Ingredients for Pears & Passion Drink:
Pear 1
White soft drink 1 cup
Grapes juice 1/2 tsp
Cream 5 tbsp
Honey 1 tsp
Ice cubes as required
Method:
Firstly, put pears cubes and add soft drink in blender and blend it.
Then add cream, honey, grapes juice and ice cubes in blender and blend them it.
Take out in a glass and serve.
