Potato Soup, Hot N Sour Soup And Thai Corn Soup by Zarnak Sidhwa

Ingredients for Potato Soup:

  • Potatoes  2
  • Onion paste 2 tsp
  • Turnip 1
  • Tomato 1
  • Water 2 cups
  • Garlic paste 1/2 tsp
  • Ginger paste 1/2 tsp
  • Butter 4 tsp
  • Cumin seeds 1 tsp
  • Coriander leaves 2 tsp
  • Salt to taste
  • Black pepper to taste
  • Sugar 1 tsp

Method:

  1. Boil potato, turnip and tomato till they are tender.
  2. Blend and pass through a sieve.
  3. Melt butter; add cumin seeds, onion, ginger and garlic paste.
  4. Fry till it is golden in color.
  5. Add soup, coriander leaves, salt, pepper and sugar and boil well.

Ingredients for Hot N Sour Soup:

  • Chili sauce 2 tbsp
  • Corn flour 1-1/2 tbsp
  • Soya sauce 1 tbsp
  • Vinegar 1 tbsp
  • Capsicum 2 tbsp
  • Spring onions 2 tbsp
  • Tomato sauce 2 tbsp
  • Carrots 2 tbsp
  • Chopped cabbage 1/4 tsp
  • Tofu, cubed 1/2 cup
  • Black pepper powder 1 tsp
  • Sugar 1/2 tsp
  • Salt to taste
  • Water 4 cups

Method:

  1. Mix water, chilli sauce, soya sauce, vinegar, sugar, salt, pepper powder and bring to boil.
  2. Now add all the chopped vegetables except tofu.
  3. Cook for a minutes and dissolve corn flour in 1/2 cup water and add to the soup stirring constantly till it becomes thick.
  4. Cook for a minute add tofu cubes.
  5. Serve hot.

Ingredients for Thai Corn Soup:

  • Vegetables stock 3 cups
  • Sweet corn 1/2 cup
  • Carrots sliced 1/2 cup
  • Mushrooms sliced 5-6
  • Spring onion greens 2-3 tsp
  • Green chili paste 1 tsp
  • Oil 1 tbsp
  • Salt to taste
  • Lime leaves 2
  • Lemon grass 1 stalk
  • Ginger 1 inch piece
  • Lemon juice 1 tsp

Method:

  1. Take the vegetable stock in a pan add lemon leaves, lemon grass and ginger.
  2. Bring to a boil and let it boil for 5-7 minutes.
  3. Heat a little oil in a pan, add sliced onions, carrots, mushrooms and saute for few minutes.
  4. Strain the stock and pour it over the sauted vegetables.
  5. Add sweet corn and boil for 2-3 minutes.
  6. Add salt to taste and green chilli paste.
  7. Add spring onion greens and coriander leaves.
  8. Add a little lemon juice for sourness and serve hot.
