Ingredients for Gajar Ki Qalqand:

  • Carrot (grated) 1/2 kg
  • Sugar 1 cup
  • Khoya 1/2 kg
  • Kewra 1 tsp
  • Green Cardamom 1/2 tsp
  • Almonds and pistachio  as required
  • Silver foil for garnish

Method:

  1. Cook grated carrot in pot on low flame.
  2. When water dries, put sugar and dry on high flame.
  3. After that, turn off the stove and add chopped cardamom.
  4. Now take pot in pot, mix khoya and kewra essence.
  5. Then grease tray and spread it.
  6. In end, put almonds and pistachios on top.
  7. Together garnish with silver paper and chill it.
  8. Then cut in cubes and serve.

Ingredients for Capsicum Paneer Masala:

  • Capsicum 4
  • Cottage cheese 200 gm
  • Yogurt 250 gm
  • Tomato 2
  • Onion 2
  • Green chilies 4
  • Green coriander 1/2 bunches
  • Red chili powder 1 tsp
  • Turmeric 1/2 tsp
  • Coriander powder 1 tsp
  • Mustard seeds 1 tsp
  • Salt 1/2 tsp
  • Oil 1/2 cup

Method:

  1. Cut capsicum into 2 pieces and take out its seeds.
  2. Now heat oil in one pot, fry capsicum and take them out.
  3. Now fry cheese in this oil.
  4. When golden, put tomato, onion and green chilies.
  5. Together put turmeric, salt, chopped red chili, mustard seeds and chopped coriander and cook on high flame for 3 minutes.
  6. Now fill fried capsicum with this masala and keep in oven proof dish.
  7. Put beaten yogurt on top, bake on grill pan on 150 degrees C oven fo 10 minutes.

Ingredients for Fried Aloo Aur Baingain Ki Sabzi:

  • Potato 250 gm
  • Brinjal 250 gm
  • Tomato 250 gm
  • Tomato Red chili powder 1 tsp
  • Turmeric 1/2 tsp
  • Mustard seeds 1/2 tsp
  • Fennel seeds 1 tsp
  • Onion seeds 1/2 tsp
  • Curry leaves 6
  • Green chilies 6
  • Green coriander 2 tbsp
  • Salt 1/2 tsp
  • Oil 1/2 cup

Method:

  1. Cut tomatoes, potatoes and brinjal into round shape.
  2. Now heat oil and fry potato and brinjal.
  3. Then put chopped green chilies in this oil and fry it..
  4. Now put curry leaves, onion seeds, mustard seeds, salt, turmeric, fennel seeds and chopped red chili and roast them for 1 minute.
  5. After that, put tomato and fried brinjal, mix it, cook for 10 minutes on low flame.
  6. When they are tendered, put green coriander and turn off the stove.

  • fried aloo baigan sabzi turned out great.Rida has used one shaan masala in the end.This is not ur typical aloo baigan recipe. Its unique and great tasting.
