Chilli Citrus Kebab, Seekh Sultan Kabab And Classic Sauce by Chef Gulzar

Ingredients for Chilli Citrus Kebab:

  • Mutton 1/2 kg
  • Orange juice 2 tbsp
  • Lemon juice 2 tbsp
  • Ginger garlic paste 1 tbsp
  • Honey 2 tbsp
  • Mint paste 2 tbsp
  • Black pepper 1 tsp
  • Cumin powder 1/2 tsp
  • Papaya paste 3 tbsp
  • White pepper 1/2 tsp
  • Oil 1-2 tbsp
  • Salt to taste

Method:

  1. Cut mutton into cubes.
  2. Now mix ginger garlic paste, honey, mint paste, chopped black pepper, chopped cumin, papaya paste, white pepper powder, oil, salt, orange juice and lemon juice together, marinate mutton cubes and leave for a while.
  3. After that, set mutton cubes in skewers or BBQ sticks.
  4. Then steam on coals or fry it after steaming or bake in oven and give smoke of coal or bake it, put in serving dish and serve with sauce.

Ingredients for Seekh Sultan Kabab:

  • Raan 1
  • Garlic paste 2 tbsp
  • Coriander seeds 1 tsp
  • Black pepper 1 tsp
  • Red chili 1 tbsp
  • Chopped onion 1
  • Mango powder 1 tsp
  • Kachri powder 2-3 tbsp
  • Lemon juice 2-3 tbsp
  • Saffron a pinch
  • Green chili paste 2 tbsp
  • Cumin (crushed) 1/2 tsp
  • Nutmeg and mace 1/2 tsp
  • Papaya paste 3 tbsp
  • Clarified butter 2-3 tbsp
  • Salt to taste

Method:

  1. Separate bone from raan.
  2. Now mix garlic paste, chopped coriander, chopped black pepper, chopped red chili, kachri powder, lemon juice, saffron, green chili paste, chopped cumin, nutmeg mace, papaya paste, ghee and salt, nicely and marinate raan.
  3. Then fold bone with raan and tight with thread.
  4. Now steam on coals on low flame or fry it after steaming or bake in oven and give smoke of coal.
  5. In end, take out and serve with sauce.

Ingredients for Classic Sauce:

  • Roasted peanuts 1 cup
  • Chopped onion 1
  • Chopped garlic 2-3 cloves
  • Ginger 1 inch pieces
  • Red chili powder 1/2 tsp
  • Curry powder 2 tsp
  • Cumin 1 tsp
  • Coconut milk 1 cup
  • Brown sugar 1 tbsp
  • Lemon juice 1 tbsp
  • Olive oil 2 tbsp
  • Salt to taste

Method:

  1. Grind roasted peanuts.
  2. Heat olive oil in one pan and fry chopped onions until reddish.
  3. Now add ginger clove, chopped garlic, curry leaves, curry powder and red chili powder and cook for 3 to 4 minutes.
  4. Now add coconut milk, brown sugar and grinded peanuts and cook until sauce becomes thick.
  5. Now add lemon juice, mix it, take out and serve with BBQ kabab.
