BBQ Thai Garlic Beef, BBQ Korian Calibie And Spicy Thai Sauce by Chef Gulzar

Ingredients for BBQ Thai Garlic Beef:

  • Beef pasanday 1/2 kg
  • Garlic paste 2 tbsp
  • Green chili paste 2 tbsp
  • Papaya paste 2 tbsp
  • Brown sugar 1 tbsp
  • Black pepper 1 tsp
  • Thai red curry paste 1 tbsp
  • Basil 1/2 tsp
  • Oyster sauce 1 tbsp
  • Oil 1-2 tbsp
  • Salt to taste

Method:

  1. Firstly, put garlic paste, green chilies paste, papaya paste, brown sugar, chopped black pepper, thai red curry paste, basil, wooster sauce, oil and salt in one mixing bowl and leave for 2 to 3 hours.
  2. Now put beef pasanday in BBQ skewers, if you want, steam on coals on low flame or fry it after steaming and give smoke of coal.
  3. In end, give grill mark on grill pan, take out in serving dish and serve with sauce.

Ingredients for BBQ Korian Calibie:

  • Ribs (small pieces) 1/2 kg
  • Garlic paste 2 tbsp
  • Red chili paste 2 tbsp
  • Papaya paste 2 tbsp
  • Soya sauce 1/2 cup
  • Brown sugar 2 tbsp
  • Black pepper 1 tsp
  • Lemon juice 4 tbsp
  • Green onion 1
  • Sesame seed oil 1 tsp
  • Oil 2 tbsp
  • Salt to taste
  • Coal 1 piece

Method:

  1. Cut ribs into small pieces.
  2. Now put garlic paste, papaya paste, soya sauce, brown sugar, chopped red chili, lemon juice, chopped green onion, sesame seed oil, salt and oil and make paste.
  3. Now put paste on ribs and leave for an half hour.
  4. If you want, steam on coals or fry it after steaming and give smoke of coal or bake in oven.
  5. In end, give grill mark on grill pan, take out in serving dish and serve with sauce.

Ingredients for Spicy Thai Sauce:

  • Soya sauce 1/2 cup
  • Thai red curry paste 1 tsp
  • Green onion 1-2 sticks
  • Garlic 4-5 cloves
  • Green coriander 1/2 bunch
  • Stock 1/2 cup
  • Fish sauce 2 tbsp
  • Brown sugar 1 tbsp
  • Lemon juice 2-3 tbsp
  • Oil 2 tbsp
  • Salt to taste

Method:

  1. Heat oil in pan and fry garlic cloves.
  2. Now add soya sauce, Thai red curry paste, green onion, fish sauce, brown sugar, lemon juice, oil and salt.
  3. Then add stock and cook it until thick.
  4. In end, garnish with green coriander and serve.
