Honey Fish Steak, Steam Red & White Dumpling And Fettuccine Alfredo by Chef Zakir

Ingredients for Honey Fish Steak:

For Fish:

  • King fish 1/2 kg
  • Lemon juice 2 tbsp
  • Ginger garlic paste 1 tbsp
  • Flour 1/2 cup
  • Oil 4-5 tbsp
  • Salt to taste

For Sauce:

  • Tomato ketchup 3 tbsp
  • Worcester sauce 2 tbsp
  • Soya sauce 2 tbsp
  • Honey 3 tbsp
  • Corn flour 1 to 1-1/2 tbsp
  • Ginger chopped 1
  • Garlic chopped  2-3 cloves
  • Spring onion 1
  • Water 1/4 cup
  • Oil 2-3 tbsp
  • Salt to taste
  • Black pepper powder 1/4 tsp

Method:

  1. Firstly, marinate fish with lemon juice, ginger garlic paste and salt.
  2. Then coat with dry flour.
  3. Now heat 3-4 tbsp oil, shallow fry fish and keep it aside.
  4. Then heat 3-4 tbsp oil in separate pan, add chopped ginger garlic and fry until brown.
  5. Then add few drops of honey and cook for few minutes. Now mix soya sauce, wooster sauce, tomato ketchup, salt, chopped red chili, chopped green onion for 1 to 2 minutes and add 1/4 cup water.
  6. Dissolve corn flour in water and make sauce thick.
  7. Put fish steak on platter, spread sauce on top and serve.

Ingredients for Steam Red & White Dumpling:

For Dumpling:

  • Flour 250 gm
  • Baking powder 1 tbsp
  • Water as required
  • Salt to taste
  • Egg 1

For Filling:

  • Beef mince 250 gm
  • Chicken mince 250 gm
  • Wooster sauce 1 tbsp
  • Soya sauce 1 tbsp
  • Sugar 1 tsp
  • Salt to taste
  • Black pepper powder 1/4 tsp
  • Ginger garlic paste 1 tbsp
  • Corn flour 2 tbsp
  • Spring onion 1

Method:

  1. Firstly, put salt, baking powder and half egg in flour and knead with some water. Keeping in mind that dough should not be so soft or so hard.
  2. Now add beef mince, chicken mince, salt, chopped black pepper, green chilies, soya sauce, wooster sauce, sugar and ginger garlic paste in chop and grind it nicely.
  3. Now add corn flour in it.
  4. Then add some flour in remaining egg and make batter.
  5. Make small portions of dough and roll them like roti.
  6. When all portions are roll out,  fill it with little mince and close it like bag.
  7. Then place in steamer and steam for 15 to 20 minutes.
  8. When ready, take out and serve hot with any sauce or ketchup.

Ingredients for Fettuccine Alfredo:

  • Butter 2 tbsp
  • Fresh cream 1 cup
  • Boiled pasta 1/2 packet
  • Parmesan cheese granted  100 gm
  • Nutmeg powder a pinch
  • Salt to taste
  • Black pepper 1/2 tsp
  • Parsley shopped 1 tbsp
