Daal Ki Kachori, Sooji Ka Halwa And Fry Pooriyan by Chef Gulzar

Ingredients for Sooji Ka Halwa:

  • Semolina                               1/2 kg
  • Sugar                                     1/2 kg
  • Clarified butter                     1 cup
  • Yellow food color                1/2 tsp
  • Cardamom                            4-5
  • Pistachio and almonds      as required
  • Kewra essence                  few drops

Method:

  1. Roast semolina in one pot.
  2. Now mix cardamom and sugar in ghee.
  3. When it boils, put semolina, gram flour and yellow color, mix it nicely and stir it continuously.
  4. When halwa begins to burst, put kewra essence and remove from stove.
  5. Garnish with almonds and pistachio.
  6. Halwa is ready.

Ingredients for Daal Ki Kachori:

For Dough:

  • Flour 2 cups
  • Clarified butter 2 tbsp
  • Oil to fry
  • Salt to taste

For Filling:

  • Boiled gram lentil 1 cup
  • Roasted cumin 1 tbsp
  • Whole red chilies 5-6
  • Salt to taste

Method:

  1. Add flour, ghee and salt in one mixing bowl, mix it nicely and knead it.
  2. Put boiled gram lentil, roasted & crushed cumin, red chili and salt in chopper and grind it.
  3. Now make portions of knead flour, fill mixture of gram lentil and leave for a while.
  4. After that, roll it.
  5. Then heat oil  in one pan and fry kachoriyan on low heat.
  6. When they are fried, take out and serve with chatni.

Ingredients for Fry Pooriyan:

For fry poories:

  • Flour 1/2 kg
  • Clarified butter 2-3 tbsp
  • Soda bicarbonate 1 pinch
  • Oil to fry
  • Salt to taste

Method:

  1. Add flour add ghee, soda bicarbonate and salt in one mixing bowl and knead it.
  2. Now make small small portions and roll out like pooriyan.
  3. Heat oil in one big pot on high flame and fry pooriyan .
  4. Poriyaan are ready.
