Ingredients for Biryani Ayam:
Chicken 1-1/2 kg
Rice 1-1/2 cups
Garlic 1 clove
Ginger 3
Dried red chilies 2
Poppy seeds 1 tbsp
Cashew nuts 10
Almonds 10
Oil or ghee 4 tbsp
Cloves 5
Cinnamon 2 inch piece
Onions, sliced 1 cup
Salt to taste
Curry powder 1 tsp
Thin coconut milk 3 cups
Raisins 2 tbsp
Method:
Grind together the garlic, two pieces of ginger, dried red chilies poppy seeds, cashew nuts and almonds to a smooth paste.
Cut the remaining ginger into the thin strips.
Heat the ghee or oil in a wok and saute the cloves, cinnamon and onions till fragrant.
Add the chicken, salt, ground paste and curry powder and stir to mix well.
Add little water, cover and cook for ten minutes.
Mix the rice with the coconut milk, ginger strips and salt and cook till most of the moisture is absorbed and the rice is tender.
Layer the rice and chicken mixture alternately in a serving bowl.
Sprinkle raisins on top and serve.
Ingredients for Burger Pizza:
Burger buns 2
Oil 2 tbsp
Onion 1
Capsicum 1
Button mushrooms 1-2
Chicken 1/2 cup
Tomato ketchup 1 cup
Mozzarella cheese 1 cup
Method:
Halve burger buns and place them in anon stick pan.
Drizzle a little oil and toast.
Slice onion thinly, cut green capsicum into thin strips, chop button mushrooms and mix them.
Turn the burger halves, cover and cook till they turn slightly crisp.
Chop chicken tikkas into small pieces.
When the burger halves are slightly crisp, spread tomato sauce over them, spread the mixed vegetables.
Put some chicken tikka pieces on each, sprinkle mozzarella cheese and oregano.
Cover the pan and cook till cheese melts and the base becomes crisp.
Remove from the pan and serve hot.
Ingredients for Eggless Brownies:
Flour 3/4 cup
Caster sugar 3/4 cup
Cocoa powder 1/2 cup
Baking powder 1/2 tsp
Chopped walnuts 1/2 cup
Chocolate 1/2 cup
Plain yogurt 1 cup
Water 1/2 cup
Method:
Preheat oven to 180 C for 15 minutes.
Lightly grease an 8 x 8 inch square pan and line it with aluminum foil, with some extra foil hanging around the edges so that it is easy to lift the brownie.
Melt the chocolate add the yogurt and sugar, mix until combined.
Sift flour, cocoa powder, baking soda and nuts and stir fry until just combined.
To this mixture add water and stir carefully until the batter comes together.
Bake the brownies for 20-25 minutes or until a tooth pick inserted in the middle comes out clean.
Cook and cut in squares.
