Fried Apple Pie, Cajun Chicken Wings And White Korma by Zarnak Sidhwa

Ingredients for Fried Apple Pie:

For the Tart Shell:

  • Flour 1 cup
  • Cold butter 6 tbsp
  • Ice water 1/4 cup
  • Salt 1/2 tsp
  • Sugar 1 tsp

For Filling:

  • Peeled apples 2 cups
  • Apple juice 1/2 cup
  • Sugar 1/4 cup
  • Cinnamon 1 tsp
  • Lemon 1
  • Salt a pinch
  • Flour 2 tbsp
  • Oil to fry
  • Icing sugar to dust

Method:

  1. In a food processor, combine the flour, salt, and sugar by pulsing 3 times.
  2. Cut up the butter into large chunks and add to the flour, pulse several times, until the mixtures is crumbly.
  3. Drizzle in the ice water, and pulse 2 to 3 times until the dough just holds together. Turn the dough out into a lightly floured surface and form into a 6 inch inch disc.
  4. Wrap the disc tight in plastic wrap and refrigerate for at least 30 minutes. Meanwhile, make the filling.
  5. Combine the apples, apple juice, sugar, zest and juice, and salt, and cook over medium heat.
  6. The mixture will bubble, and cook down.
  7. After about 15 minutes the apples will soften, but still have a little texture.
  8. Stir in the flour and cook for a minute or two more.
  9. Remove from heat and set filling aside to cool.
  10. On a lightly surface roll 1/3 of the dough into a 10-12 inch oval.
  11. To make the first two pieces, cut the oval in half, and carefully pile 1/3 cup of filling on one half each semi-circle.
  12. Quickly wet the edges, and fold over, pressing each into a turnover shape.
  13. Seal the edges with the tines of a fork.
  14. Fry the pies for a total of 3 - 4 minutes in hot oil.
  15. Flipping them halfway through.
  16. Remove from oil when the pies are a deep golden brown.
  17. Place on a stock of paper towels, dust with icing sugar and serve.

Ingredients for Cajun Chicken Wings:

  • Chicken wings 1 kg
  • Salt to taste
  • Paprika 2 tsp
  • White pepper 1 tsp
  • Black pepper 1 tsp
  • Oregano  1 tsp
  • Garlic paste 2 tsp
  • Onion 1 medium
  • Lemon juice 1/2 cup
  • Oil 3 tbsp

Method:

  1. Mix together salt, paprika, white pepper powder, black pepper powder, oregano, garlic paste and onion paste.
  2. Combine lemon juice, oil, and half the mixed spice powder in a small bowl.
  3. Apply this mixture to the chicken wings so that they are well coated.
  4. Let marinate for an hour in the refrigerate.
  5. Remove the chicken wings from the marinate and then sprinkle the remaining spice mix on both the sides.
  6. Bake in a preheated oven for 20 minutes turning over once until cooked and golden. Serve hot.

Ingredients for White Korma:

  • Chicken 1 kg
  • Oil 2 tbsp
  • Cumin seeds 1 tsp
  • Mustard seeds 1/2 tsp
  • Onion chopped 3 medium
  • Green chili 6
  • Curry leaves 10-12 leaves
  • Yogurt 1/2 cup
  • Salt to taste
  • Coconut 1 cup
  • Coriander leaves 1/2 medium
  • Coriander powder 3 tsp

Method:

  1. Grind coconut to a smooth paste heat oil in a deep pan.
  2. Add cumin seeds, mustard seeds and chopped onions, saute till onions turn light golden.
  3. Add chopped green chilies, curry leaves and chicken and saute for three to four minutes.
  4. Add yogurt, half a cup of water, salt and bring it to a boil.
  5. Cover and simmer for five minutes. Add coconut to the chicken.
  6. Mix well and add chopped coriander leaves, coriander powder and cook till done. Serve hot.

  • Tried dis Fried Apple pie....Excellent in taste, But i used Readymade Shortcrust pastry and i made parcel shape instead of D shape pastry... Guys do try at ur home... Jazak Allah.....................
