Chocolate Chip Cookies, Barbecue Sauce Chicken And Eggplant Parmigiana by Zarnak Sidhwa

Ingredients for Chocolate Chip Cookies:

  • Flour sifted 1 cup
  • Flour sifted 2 tbsp
  • Baking soda 1/2 tsp
  • Salt 1/2 tsp
  • Butter, softened 1/2 cup
  • Brown sugar 1/3 cup
  • Caster sugar 1/3 cup
  • Egg 1
  • Very hot water 1-1/2 tsp
  • Vanilla essence 1/2 tsp
  • Chocolate chips 1 cup

Method:

  1. Heat oven to 180 degree C.
  2. Beat butter, brown sugar, caster sugar and egg in large bowl until fluffy, about 3 minutes.
  3. Beat in hot water and vanilla essence.
  4. Gradually fold in flour, salt and baking soda.
  5. Mix in the chocolate chips.
  6. Drop dough by well rounded teaspoonful on baking sheets.
  7. Bake until golden about 10 minutes.
  8. Cool on wire rack and serve.

Ingredients for Eggplant Parmigiana:

  • Flour 1/4 cup
  • Salt 1/2 tsp
  • Brinjal 1
  • Egg, beaten 1
  • Oil 1/4 cup
  • Parmesan cheese 1/2 cup
  • Mozzarella cheese 3/4 cup

For Tomato Sauce:

  • Onion chopped 1/2 cup
  • Celery chopped 1/4 cup
  • Garlic clove, minced 1 small
  • Oil 2 tbsp
  • Tomatoes, chopped 1/2 kg
  • Tomato paste 1/3 tsp
  • Salt 1/2 tsp
  • Black pepper 1/4 tsp
  • Parsley 1 tsp
  • Dried oregano 1/2 tsp
  • Bay leaf 1

Method:

  1. Mix all ingredients for the tomato sauce and cook till thick combine flour and salt.
  2. Dip brinjal in egg, then in seasoned flour.
  3. Saute the brinjal slices in hot oil in large pan for 3 minutes on each side.
  4. Drain slices well on paper towel.
  5. Place 1/2 of eggplant in single layer in a pyrex dish.
  6. Sprinkle with 1/2 of parmesan cheese, 1/2 tomato sauce and 1/2 mozzarella cheese. Repeat layers.
  7. Bake, uncovered at 200 degrees C for 15 to 20 minutes or until hot.

Ingredients for Barbecue Sauce Chicken:

  • Chicken 1 kg
  • Ketchup 1 cup
  • Honey 3 tbsp
  • Lemon juice 1 tbsp
  • Tabasco or hot pepper sauce  small quantity
  • Salt and pepper to taste
  • Charcoal small piece

Method:

  1. Combine ketchup, honey, lemon juice, tabasco or pepper sauce, salt, and pepper and marinate chicken with it.
  2. Bake at 180 degrees C for 45 minutes or till done or cook in a pan till done.
  3. Keep basting with remaining marinate.
  4. Once chicken is fully cooked, give dam of charcoal.
