Achari Aloo Ki Tahirui, Keema Kaleji And Adraki Chops by Rida Aftab

Ingredients for Achari Aloo Ki Tahirui:

  • 2 tbsp mixed achar
  • 3 medium sized potatoes
  • 1-1/2 cups of soaked rice
  • 1 tbsp ghee
  • 5-6 cloves
  • 2 bay leaves
  • 7-8 whole black pepper
  • 5-6 green cardamom
  • 1 black cardamom
  • 1/4 tsp black cumin
  • 2 onions
  • Salt as required

Method:

  1. Heat oil or ghee in one pan, put cloves, curry leaves, black pepper, green coriander, black pepper, black cardamom and cumin and saute it.
  2. Then put onion in another pan and make it light brown. Now add small potatoes and medium potatoes cubes and saute it.
  3. After that, put fried masala, mix vegetables achar, soaked rice, 3 cup water and salt and mix it nicely.
  4. When water is boiled, keep low flame and cook until rice is tendered. In end, serve hot.

Ingredients for Keema Kaleji:

  • 1/2 kg mutton mince
  • 6 chicken kaleji
  • 1/2 cup oil
  • 2-3 green chilies
  • salt as required
  • 1 tsp cumin
  • 2 onions
  • 1/2 tbsp ginger paste
  • 2 tomatoes
  • 1-1/2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/4 tsp turmeric
  • 1/2 tsp all spice powder
  • 2 tbsp coriander
  • 1/2 lemon wedges

Method:

  1. Heat oil in pan, put green chilies and fry it.
  2. Now add chicken kaleji pieces and salt, fry for 3 to 4 minutes, take out and keep aside.
  3. Pour heat remaining oil in karahi pan and put cumin. When it color changes, add onion and do golden brown.
  4. Now put ginger garlic paste and fry for 1 minute.
  5. Then put tomato and salt, cover it and cook for 2 to 3 minutes on low flame.
  6. Now put red chili powder, chopped coriander and turmeric and cook it lightly.
  7. Then add mutton mince and 1/2 cup water, cover it  and cook on low flame until mince is tendered and comes up.
  8. Then add in kaleji, put all spice powder and cook for 1 minute.
  9. In end, garnish with green coriander and lemon wedges and serve.

Ingredients for Adraki Chops:

  • 1 tbsp ginger paste
  • 2 inch piece of ginger
  • 1 kg mutton chops
  • 1 cup yogurt
  • 1 tbsp red chili powder
  • 1/4 tsp turmeric
  • Salt as required
  • 3 onions
  • 2 green chilies
  • 1/2 cup oil
  • 1 lemon
  • 1/2 tsp all spice powder
  • 1 tbsp coriander
  • Mint leaves for garnishing

Method:

  1. First, marinate mutton chops with yogurt, chopped red chili, turmeric, ginger garlic paste, salt, onions and green chilies for 3 hours.
  2. Now heat oil, put marinated mutton chops and roast for 3 to 4 hours.
  3. Then cover pan and cook for 30 minutes. Add water if necessary.
  4. Now put ginger, lemon juice, all spice powder and green coriander and mix it.
  5. In end, put mint leaves and serve hot.
